These Baked Ham and Cheese Rolls are perfect for summer lunches and school lunch boxes! They’re also perfect to take to work!

Friday was Big Bear’s Birthday. *Happy Birthday Weekend, BigBear!*

Baked Ham and Cheese Rolls

I’ve always made a point to bake or make something extra special for his birthday. He’s not really big into birthday cake so most years I end up making cheesecake for him.  For two years in a row he asked for this Peanut Butter Truffle Mousse Cheesecake. I did a pretty good job with mine, he loved it and I was happy with it. Last year was a rush and he requested these No Bake Peanut Butter Cheesecakes, they were also a hit!

The thing with making Big Bear birthday treats is that I literally have to drag it out of him. Like “Honey, what do you want for your birthday?” — “Don’t matter :)” — “No, really what do you want” — “Anything will be fine” — NO that’s not how it’s suppose to work haha.

But this year I only had to ask him once and he made me a list. haha I suppose that’s what I get for asking, right? But that’s totally cool because I rocked that list and I made everything on it! He chowed down on his favorite foods yesterday and ate like a king haha. 🙂

Here’s what was on his list:

Red Potato and Shrimp Hash: http://tinyurl.com/lc7wcnt
Cookie Cups : http://tinyurl.com/kpkacb6
Loaded Potato Skillet: http://tinyurl.com/kw9foco
Honey Teriyaki salmon: http://tinyurl.com/ag5y69o
He also got Baked Ham and Cheese rolls for lunch….

I surprised him with the cookies at work, he had the hash for breakfast, with Honey Teriyaki salmon and loaded potato skillet for dinner!

Plus he got an extra little goodie that he hadn’t requested. I made a batch of these Baked Ham and Cheese Rolls for this lunch on Friday. He made a point to tell me that they were 100% “Big Bear Approved” haha.

So since today for #SundaySupper our theme is “LunchBox Meals”, I knew that these would be perfect to share with everyone today! Big Bear was amazed that they taste so good and only have 3 ingredients! I can’t believe I hadn’t made them before.

I’m telling you, sometimes simple is really best! Serve them with a side of pizza sauce and you’ve got a meal that is a keeper!!

What you’ll need:
7.5 oz package of colby jack cheese slices
1.5 pound of pre-cooked ham slices
1 can refrigerated pizza dough (or homemade dough)

*Pizza Sauce for dipping* Optional

Lay a layer of ham slices over the cheese.

Starting at the short end on the right, roll the dough with cheese and ham inside towards the left, jelly roll style. (Like Cinnamon Rolls)

Once it’s completely rolled together, place it on a cutting board with the seam down.

With a sharp knife, carefully cut one inch “rolls”. Place them on a greased baking sheet.

Oh how yummy! I have had something similar pre-made from the grocery deli, but yours look WAY better! I’ll have to definitely try! And Happy Birthday to husband! My husband is pretty much the same when it comes to options…he’ll always say “everything you make is good”, which is nice but totally misses the point!

oh my goodness, these look amazing! we do something similar, but we bake it as one huge loaf and then cut them up after… and it always feels like it takes an eternity in the oven. Slicing them first definitely cuts down on baking time… making these soon!!

Aw, your husband is a lucky man! What a birthday feast! Love the idea of these easy lunchbox rolls… we can’t buy refrigerated pizza dough here, but I definitely have to make these with homemade pizza dough. I’m pretty sure that my husband would adore them!
