This Baked Pizza Spaghetti Squash for the #12bloggers group that I’m in is going to be the last recipe/post that I write and make before we move into the new apartment. It’ll be posted on the blog after we’re already in the apartment downtown but it’s technically the last dish that I’m going to make in our house.

I can’t believe that moving day is already here. We’re going to miss the house but I have a feeling that the apartment is going to be amazing  for us.


I can’t wait to tell you all about it once we’re in and settled. I mean we’re still in the same town for now but it feels like we’re moving into a whole new city. Weird right?

So let’s get onto this Baked Pizza Spaghetti Squash.

In my earlier years in the kitchen I had tried to make Spaghetti Squash and I have to admit that at first I didn’t enjoy it very much.

But let me tell you friends, things have changed and I’m working on getting Thomas on board with it too. This Baked Pizza Spaghetti Squash is one of my tactics for getting him to love Spaghetti Squash because we all know that Thomas loves anything that has to do with pizza!

I’m so glad to tell you that he liked it!

I’ve found that if you cook it right, Spaghetti Squash taste just like Spaghetti! (Well to me it does!)

I’ve fallen in love with 2 ways of cooking Spaghetti Squash so far!

1st is this Super Easy Crock Pot Spaghetti Squash with Meatballs recipe from I Wash, You Dry.

Next is this Baked Pizza Spaghetti Squash that I’m sharing with you today!

Baked Pizza Spaghetti Squash #12bloggers

You just bake the Spaghetti Squash with a bit of olive oil and seasoning, add your favorite pizza sauce, pile on your favorite pizza topping and melt a bit of cheese on top for a delicious and filling dinner!

Baked Pizza Spaghetti Squash

Ingredients 

1 Spaghetti Squash
4 oz olive oil (I used a garlic infused olive oil)
2 tablespoons of pizza seasoning
(I used Pizza Seasoning Spice Blend from The Spice and Tea Exchange)
1 cup of your favorite pizza sauce (store bought or homemade)
1 cup sauteed mushrooms, (set a few to the side for topping)
1/2 mini pepperonis, (set a few to the side for topping)
2 cups shredded mozzarella cheese, 1 for layers and 1 for topping
Directions 

Preheat the oven to 400F.

Wash and dry the Spaghetti Squash.

Carefully slice the Spaghetti Squash in half vertically.

Scrape out the seeds and throw them away.

Drizzle each half with olive oil and pizza seasoning.

Bake for 1 hour.

Remove squash from the oven and fill the middles of each squash with layers of pizza sauce, sauteed mushrooms, (set a few to the side for topping), 1/2 mini pepperonis, (set a few to the side for topping), and 1 cup of the shredded mozzarella cheese.

Finish with a layer of cheese and a few mushrooms and mini pepperonis.

Place squash halves under a boiler on high for 2-3 minutes to melt the cheese.

    I normally just toss my spaghetti squash with butter and a little S&P, but this looks way better. Like your Thomas, anything related to pizza is a big fat yes please in my books. 🙂 I mean, who can say no to gooey cheese and pepperoni, right?
    PS: Congrats on moving on up… hope everything went well on moving day and that you’ve gotten unpacked in record time!

    Spaghetti squash is my jam! I LOVE it smothered and filled and with different flavors. Love the idea of throwing on pizza toppings. I’m totally sold!
