Banana Custard

I bought a new cookbook the other day called Southern Cooking………..well OK its not “new”.. its kinda old for a book. Published in 1941 it has a ton of old southern recipes! I bought it at Goodwill for like $1.00. woot woot! haha

4 Bananas
3 eggs
1 tablespoon butter
1 cup Milk
1/2 Sugar
1 teaspoon vanilla

Mash bananas, add milk, sugar, butter and yolks of eggs. Cook in a double boiler until thick. Pour into a cook crust, make a meringue of the whites using 3 tablespoons extra sugar. Put on top of custard and bake meringue in a 350 F oven for about 10 minutes. Meringue will be a brown/ caramel color once done!

How I made my meringue:
3 eggs whites
3 tablespoons of sugar
1 teaspoon of Vanilla

Pour all items into a bowl. Mix using an electric mixer oh high for about 6 minutes. Egg whites and sugar should double if not triple in size. Continue beating egg whites on high speed until they form peaks with tips that stand straight when the beaters are lifted.


My first time ever making Meringue! I think it turned out pretty good!
