BBQ Shrimp Foil Packets & a BBQ Giveaway

My friend, Anne, has introduced me to some wonderful foods over the past few years. I’ve started using coconut oil in place of regular oil because of her, I use pineapple juice instead of butter to saute chicken, we make pasta salad with greek yogurt now in place of mayo (well in some cases) and I finally made a gluten free dessert that Meghan loves because of Anne’s suggestion of almond flour in the peach cobbler (something I had never used before)!

With all of that being said, I shouldn’t have to tell you that when it comes to cooking or food recommendations, I trust Anne 100%. So when she introduced me to Bar-B-Que Beast Sauce and told me that I needed to check it out, I knew that it would probably be a hit in our house. After all, she hasn’t steered me wrong yet!

Bar-B-Que Beast, LLC makes all of their sauce from scratch and they also make all of their BBQ sauces in small batches to make sure that it comes out perfect, each and every time! Now those are my kind of people right there. Quality is so important to me now so it makes me love this company and sauce even more to know that there are real people behind this sauce and label that truly want you to have an amazing sauce and want to have it become a favorite of yours!

I got to chat with Lauren a bit (her parents started the business a few years back) and she was gracious enough to send me two bottles of  Bar-B-Que Beast for Big Bear and I to try out.  I have to tell you that it was really unlike any BBQ sauce that we’ve tried. 

Most BBQ sauces that we eat have a small “BBQ flavor” and then they just kind of blend into the food, or they’ll be too super sweet or we’ve even tried some that were too tangy. 

But Bar-B-Que Beast sauce let’s you know that you’re eating Bar-B-Que Beast and doesn’t let you forget it. I, of course, mean that in the best way possible 🙂 It had a kick to it, with a wonderful spice of heat that brings a huge punch of flavor to whatever you’re using it on.

We’ve used it for a dipping sauce and we’ve used it on sandwiches but I wanted to use it on something that was simple, something that would really make the sauce shine and not interfere too much with the flavor when it was time to share the sauce with you. So I choose to make BBQ Shrimp Foil Packets!

They are so simple to put together but the flavor is amazing. (Big Bear pretty much inhaled two of these for dinner)

So what you’ll need:

1 pound medium shrimp, peeled and deveined
1 cup Bar-B-Que Beast Sauce
2 tablespoons coconut oil (or cooking oil)
1/2 teaspoon garlic powder (Optional)
2 cups chopped broccoli florets
2 cups chopped mushrooms
2-4 cups prepared White Rice or Rice Pilaf (depending on how much rice you’d like)
Aluminum Foil
What to do:

Pre-heat oven to 425F. 

In a large skillet, melt the coconut oil. Add in the broccoli and mushrooms. Sprinkle with garlic powder and saute until tender. 
To make the Foil Packets, lay 2-3 large sheets of foil onto of each other.  Roll the edges together and upwards to create a “bowl of foil”. Make 4-5 bowls. 
Add scoops of mushrooms and broccoli to each bowl. 
In a medium bowl combine shrimp and BBQ sauce.  Mix well. 
Spoon BBQ sauce covered shrimp into foil packets.

 Bunch the edges of the bowl together to close the packet. (Loosely close it, leave a little opening to vent)
Place packets onto a baking sheet. Bake for about 15 minutes or until shrimp are cooked.
Carefully open packets and scoop out contents onto a bed of rice. 
Serve with BBQ dipping sauce

BBQ Shrimp Foil Packets

Ingredients
