Beef and Broccoli sounds like a pretty easy dish right? A pretty basic dish that anyone could put together, right? If you answered “Yes”, you are correct. 🙂
But even though it’s so simple to make, I think I’ve only made it about twice, ok maybe three times, but no one is counting here! I always liked it before when I made it but I think we added to many spices to the meat and it was just not what I was wanting out of a Beef and Broccoli dish. Sometimes simple is best.
When we were at Disney we spent our last full day at the Animal Kingdom. The Animal Kingdom is probably my favorite park.
It’s not as crowed (at least not when we were there), it’s full of animals, the flowers are beautiful and it’s packed with some pretty good food!
I also absolutely love the detail in all of the buildings in the Animal Kingdom!
As I like to do with most of my trips, I kept a running list of all of the restaurants that we ate at and which dishes we loved when we where at Disney World back in May. Yak and Yeti was our lunch spot on Sunday when we were traveling around Disney’s Animal Kingdom.
We stopped in a little after the lunch rush and only had about a 15 minute or so wait, which was totally worth it to be able to sit down, rest my legs and eat in the air condition. My legs always hate me with a passion when I go to Disney because I literally walk everywhere and easily cover a few miles each day (a few being a low guess, feels like a billion!)
We decide to split an appetizer and an entree so that we could enjoy two dishes without over stuffing ourselves. We also decided on this because, as most know, the prices at Disney are beyond crazy and this way we didn’t spend a huge chunk of change on lunch.
(As in the Beef and Broccoli dish alone ran up a $20.00 tab). You know if I didn’t cook and I didn’t know how much beef and broccoli really cost to make maybe it wouldn’t drive me as crazy… maybe haha. But let’s just say that at home, I can feed quite a few people Beef and Broccoli for $20 bucks.
But I guess that’s a good thing that I’m really into food, because I can come home and re-create some of the meals that we loved while on vacation! *Pork Pot Stickers are on my bucket list!!* That lime sauce that they serve with the Pot Stickers is to-die-for!
So anyways, back to the Beef and Broccoli. Over the weekend I decided to give it another shot as I was reading through my notes from the Food Blog Forum Conference at Disney and stumbled across my list of restaurants from the trip.
Very glad that I gave it another shot, because this time I kept is simple and paired the Beef and Broccoli with Jasmine Rice just like they did at Yak and Yeti. BigBear and I loved it. It came together in probably 20 or so minutes and turned out to be the perfect weekend lunch.
But it’s also going into the rotation for weeknight dinners around here too since it was came together so fast.
