I haven’t had a Blue Raspberry ICEE in FOREVER! It’s been years and I mean YEARS. When I was little there was a store in our mall that my mom shopped at a lot and up towards the front of the store they had a little counter that had popcorn and ICEEs!
Red, Blue, it didn’t matter, I would ask for one haha. Sometimes I got one, sometimes the answer was no but either way, I had enough of them to remember watching the Blue Raspberry ICEE machine spinning and spinning while they made my ICEE.
So it’s been years since I’ve had a Blue Raspberry ICEE so why the Blue Raspberry Macarons? Well, these were actually an accident? haha.
Wait? How does one accidentally make Blue Raspberry Macarons?
Well what actually happened was I made the wrong color macarons and I didn’t want to throw them away. I was originally testing a recipe and color combo for Robin Egg Macarons for #EasterSweetsWeek. I added a little too much of the cornflower blue color and ended up with darkish blue macarons instead of super light blue.
Don’t ask me why I thought MORE blue coloring was the answer for light blue robin egg macarons when I was coloring the batter. I’m going to blame it on the baby distracting me haha.
I had the batter, I already had them piped so I baked up the macarons and they came out perfect….well….perfectly navy blue.
What was I going to go with blue macarons? I started searching for blue flavor ideas for desserts, like WHAT flavor goes with BLUE? After a while I thought, “Blue Raspberry!” It might not the be electric blue of my childhood Blue Raspberry ICEEs but the blue and pink went great together and the Blue Raspberry Macarons were born!

So here is what I used for the Raspberry part for Blue Raspberry Macarons. I used a bit of Raspberry fruit spread and a tiny bit of Raspberry Extract.
I’m showing you this because I want to also show you the two different filling colors.
The first one here is the filling with ONLY the raspberry spread and extract. You can see little bits of the fruit in there and it tasted perfect BUT I wanted hot pink for these Blue Raspberry Macarons. That’s why I added a few drops of magenta food coloring. (pink will work too)
