Just in case you’re looking for a last minute dish to have for Thanksgiving, I wanted to go ahead and get this posted. I’ve always said I was going to bake brie in puffed pastry. I saw Paula Deen do it a few years ago on TV and then a week or so ago Melanie from A Beautiful Bite (Melanie in the Middle) posted this amazing looking Cranberry Pecan Brie Wrapped in Phyllo. After seeing that, I knew I needed to bake some brie. haha. I bought a round from Brie from Sam’s Club and then I couldn’t figure out kind of topping I wanted on the brie. After a little pondering I decided on Apple and Caramel. 🙂 One of my favorite combinations 🙂
See.. that would be the Brie and Brown Sugar and Apples melting out of the golden puffed pastry! Scoop that up with some crackers or apples slices and it is fantastic!
This literally takes about 5 minutes to put together…. ok… maybe like 5-10 minutes. I wasn’t really watching the time, but I know it was quick. Then it takes about 20 minutes to bake and bam. Done.
16 oz Brie round
1 sheet puffed pastry for wrapping brie, thawed
1 sheet puffed pastry for decorating top (optional) thawed
1/4 cup brown sugar
1 apple peeled and sliced thin
1 egg
1 tablespoon water
Instructions
Pre-heat oven to 400F.
Unwrap brie. Lay 1 sheet puffed pasty on a flat surface. Set brie ontop of puff pastry and lightly press down. This will leave the round impression of the brie on the puffed pastry so you know where to place the apples.
Remove the brie and set aside. Layer the apple slices onto the puffed pastry inside of the round impression. Cover the apples with brown sugar.
Set the brie round ontop of the brown sugar and apples pull puffed pastry over brie.
In a small bowl whisk together egg and water. Brush over puffed pastry.
To make designs on top, cut out shapes with cookie cutters from the 2nd sheet of puffed pastry. Stick to top with egg wash. Or leave plain.
Sit puff pastry covered brie on a baking sheet seam down. Bake for 20 minutes. Remove from over and let cool 15-20 minutes.
