 An awesome no bake dessert for Halloween! This looks like a creepy Halloween grave yard scene with a sweet taste! Plus the Brownie Brittle is go good!

I was first introduced to Brownie Brittle when I was in Miami last May for Blog Her Food. There was a mad dash to their table and I kept hearing a buzz of “Oh my Gosh Brownie Brittle is here”!

Of course I’m just standing there like… “Um, what’s Brownie Brittle?” With bugged out eyes and mouths a gape my friends pushed me towards what would become a new favorite in the Barrett house!

That’s how my love affair with Brownie Brittle began! Oh and how marvelous it’s been!

I’m pretty much in love with all of the flavors but I must admit that the Salted Caramel and the Chocolate Chip..well those two are my top choices!

So let me introduce you to the chocolate chip Brownie Brittle! I used the Chocolate Chip Brownie Brittle to make this Brownie Brittle™ Graveyard Eclair! I took one of our favorite desserts (the eclair) and made it 1000 times better than I thought it could be! I didn’t know that I could really improve the eclair dessert but I did… I did it in the form of a Brownie Brittle Graveyard! haha

Oh do you see that “dirt”?? That is crushed Chocolate Chip Brownie Brittle!! It made the PERFECT dirt! It even looks like there are little “rocks” in the dirt thanks  to the Chocolate Chips! haha

For decorations, I tossed on a few candy pumpkins next the the Chocolate Chip Brownie Brittle tombstones…

Brownie Brittle™ Graveyard Eclair

Brownie Brittle™ Graveyard Eclair

Ingredients

  • 5 (4oz) bags of Chocolate Chip Brownie Brittle
  • 1 large box of chocolate instant pudding
  • 3 cups of milk
  • 1 small tub whipped topping, thawed
  • 1 can of chocolate icing
  • Candy pumpkins
  • Gummy snakes
  • Gummy skeletons
  • Small tube of red icing

Instructions

  • Reserve one bag of Chocolate Chip Brownie Brittle for the topping and set aside 4-5 pieces of Chocolate Chip Brownie Brittle to use as the “tombstones” later in the recipe.
  • In a large bowl, mix together the chocolate instant pudding mix and cold milk.
  • Whisk until the pudding starts to thicken. Then fold in the thawed cool whip until it is completely incorporated.
  • In your serving dish, lay out a row of Chocolate Chip Brownie Brittle. Cover the Chocolate Chip Brownie Brittle pieces with a layer of pudding.
  • Lay down another layer of Chocolate Chip Brownie Brittle pieces on top of the pudding and then cover that layer of Chocolate Chip Brownie Brittle with pudding.
  • Continue to layer the Chocolate Chip Brownie Brittle pieces and pudding until it almost reaches the top of the dish.
  • Finish with a layer of Chocolate Chip Brownie Brittle pieces.
  • Take the bag of Chocolate Chip Brownie Brittle that is reserved for the topping and pour it into a blender. Pulse the Chocolate Chip Brownie Brittle until it resembles fine crumbs; this will be the “dirt” for the graveyard and the chocolate chips in the Chocolate Chip Brownie Brittle will resemble “rocks”. Set the crushed Brownie Brittle aside.
  • Heat the chocolate frosting in the microwave so that it is easy to pour. Pour the chocolate icing over the final layer of Chocolate Chip Brownie Brittle and use the back of a spoon to spread it to the edges of the dish so that the entire top of the dessert is covered in icing.
  • Sprinkle the Chocolate Chip Brownie Brittle “dirt” over the entire top of the dessert.
  • Refrigerate for 6-8 hours.
  • When it’s time to decorate, use the red icing to write “RIP” (or whatever saying you’d like) on the Chocolate Chip Brownie Brittle pieces that were set aside.
  • Carefully use a sharp paring knife to cut a few slits into the top of the éclair dessert and insert the Chocolate Chip Brownie Brittle tombstones into the dessert.
  • Decorate the rest of the Chocolate Chip Brownie Brittle Graveyard Eclair with candy pumpkins, gummy snakes, gummy skeletons and other Halloween themed candies
