Cheesecake Pudding Chocolate Chip Cookies

I changed mine up just a tiny bit. Also mine didn’t quite lay so nice and flat like theirs, mine kinda “poofed” a little, so try both recipes! I’m sure you’ll love either one!
Let first start with the Homemade Chocolate Chips!
I went with pastel colors for Easter for these cookies.
Homemade Chocolate Chips
What you Need:
1 Bag of White Wilton’s Chocolate Melting Wafers or your favorite while melting chocolate.
1 box of Wilton’s Chocolate Coloring (Like food coloring but directly for chocolate!)
( or if you prefer you can just buy the pre-colored Chocolate Melting Wafers, I do it this way because its cheaper to by one bag of white and tint it to what colors I need then to buy 3 different bags of chocolate)
Ziploc Bag
Wax paper
What to do:
Melt your White Chocolate according to the bags instructions. Separate into 3 bowls.
First Bowl: Use Chocolate Coloring Gels to Color this white chocolate light green.
Second Bowl: Use Chocolate Coloring Gels to Color this white chocolate light purple.
Fill 3 Zip lock bags with the 3 colors of chocolate.
You should have 1 Green bag, 1 Pink Bag and 1 Purple bag of melted chocolate.
Working with one bag at a time, snip the corner of the Ziploc bag and start piping dollops of chocolate onto a wax paper lined baking sheet.
Repeat with the bag until you have all the chips you want and then move onto the other bags.
Once all of your chips are made, place the baking sheet into the fridge for about 15 minutes to harden,
TADA, homemade Chocolate Chips. 🙂
Cheesecake Pudding Chocolate Chip Cookies
What you need:
1 cup unsalted butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 package of cheesecake instant pudding mix (3-4oz box)
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups homemade chocolate chips
What to do:
Preheat your oven to 350F
Using a stand mixer (I love my KitchenAid), beat together the butter and both sugars until creamy.
Add in pudding mix, eggs, & vanilla extract.
In a medium bowl, whisk together all of the dry ingredients: flour, baking soda, and salt.
While the mixer is running, slowly add the dry ingredients to the wet ingredients.
Continue to mix until combined.
Remove the bowl from the stand mixer and use a spoon or spatula and gently stir in your chocolate chips.
Using a small/medium scoop or a spoon, gather cookie dough into balls and place them onto prepared baking sheet. I used my Pampered Chef Stoneware Bar Pan but you could use a regular baking sheet lined with parchment paper!
Bake for 10-12 minutes. Everyone’s idea of what a “done cookie” is different so you be the judge on if they look ready. 🙂 I let mine brown a little.
Remove cookies from oven and let cool on baking sheet for a few minutes and then transfer then to a cooling rack to cool completely.
