I wasn’t sure if this recipe would be a winner but after testing it out and giving it a go, it turned out to be a new family favorite.
I also love how easy it is to change it up! I plan on making a chicken and broccoli version and a mushroom version!
Ingredients For This Casserole:
- 1 box Rice-A-Roni Creamy Four Cheese Rice Mix
- 2 tablespoons butter
- 2 1/4 cups water
- 1 can cream chicken soup
- 1/4 cup sour cream
- 2 1/2 cups cooked shredded chicken
- 1 cup shredded Mozzarella Cheese

How To Chicken Rice-a-Roni Casserole:

Preheat oven to 350F.

Prepare cheesy Rice-A-Roni according to package directions:

In a large skillet, combine rice mix and butter. Heat over medium heat, stirring frequently for about 8-10 minutes until golden.

Stir in water. Cover and reduce heat to low.

Simmer for 15-20 minutes or until rice is tender (a thin layer of water may remain at the end of cooking and it is normal)

Stir in the seasoning packet from Rice-A-Roni.

In a large bowl, combine the rice, soup, sour cream, and cooked chicken. Stir to combine.

This is the cream of chicken soup that I used. You don’t have to use the gluten-free version, that’s just what I used. Regular is fine.

Stir in 1/2 cup cheese.

Pour rice mixture in a 9×13 pan.

Top with remaining cheese.

Bake for 30 minutes.
A little prep and some bake time and dinner is done! We had this along aside some small Caesar salads the other night and it was fantastic. It even got great reviews from people I didn’t think would like it!

What Kind Of Rice-A-Roni® Did You Use For This Casserole Recipe?
For this particular recipe testing, I used the 6.4-ounce box of Rice-A-Roni Creamy Four Cheese Rice Mix. You could also use the original.
I have a homemade Rice-A-Roni recipe that may work well with this casserole too!
What Kind Of Chicken Is Best For This Casserole
I cooked 2 boneless skinless chicken breasts and shredded them for this casserole but you could also buy a rotisserie chicken from the grocery store and shredded it for this dish.
Can I Make This Ahead Of Time?
You can! Make this casserole ahead of time and pop it into the fridge. Then reheat when ready to eat. I would say 1-2 days in advance would be the max for the fridge. However, you could freeze this casserole for up to 6 months.
I will let you know ahead of time, I personally don’t like how this casserole smells cold. It wasn’t pleasant BUT it smells great warm.
What Soup Is Best For This Great Weeknight Chicken Casserole?
I used cream of chicken soup for this rice a roni chicken casserole recipe, but you could also try something like cream of mushroom soup, cheddar cheese soup, or cream of chicken with herbs.

- 1 box (6.4 ounce) Rice-A-Roni Four Cheese Rice Mix
- 2 tablespoons butter
- 2 ¼ cups water
- 1 can (10.5 ounce) cream chicken soup
- 1/4 cup sour cream
- 2 cups cooked shredded chicken
- 1 1/2 cup shredded Mozzarella Cheese
Instructions
Preheat oven to 350F.
Prepare cheesy Rice-A-Roni according to package directions.
In a large bowl, combine the rice, soup, sour cream, and cooked chicken. Stir to combine.
Stir in 1/2 cup cheese.
Pour the rice mixture into a 9x13 pan.
Top with remaining cheese.
Bake for 30 minutes.
