Summer, Cold Cheesecake and Chilly Homemade Popsicles go hand in hand! We’re using a homemade cheesecake pudding base and cherry pie filling to make some super tasty Cherry Cheesecake Popsicles!

I love the swirls in these popsicles too!

QUICK GLANCE AT INGREDIENTS FOR Cherry Cheesecake Popsicles:

  • 1 cup Dixie Crystals Extra Fine Granulated Sugar
  • 1/4 cup corn starch
  • 1/2 teaspoon salt
  • 3 cups whole milk
  • 4 large eggs, whisked together
  • 8 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon cherry extract
  • 8 ounces frozen whipped topping, thawed
  • 1 cup cherry pie filling
  • 6 graham cracker squares, crushed

How to make Cherry Cheesecake Popsicles:

  1. Follow the recipe on the Dixie Crystals site (here) to make the ice cream base for this recipe which is an awesome cheesecake pudding!

  2. Once you’ve made the ice cream base mixture and let it cool, Let cool 10 minutes.
    Whisk in butter and cherry extract, whisk until butter is melted.

  3. Fold in thawed frozen whipped topping into cooled pudding until smooth.

  4. Add cherry pie filling to a bowl and mash with fork.

  5. Scoop 2 cups pudding mixture into cherry pie filling and mix.

  6. Spoon cherry mixture into a piping bag.

  7. Spoon remaining cheesecake mixture into a separate piping bag.

  8. Then we’re going to layer the cheesecake and cherry mixture.

  9. Us a knife or skewer to lightly swirl cheesecake and cherry mixture together.
    Sprinkle bottoms with crushed graham crackers.

  10. Add popsicle sticks and freeze 8 hours or overnight until frozen.

Frequently Asked Questions

How long do these need to freeze?

They need to hang out in the freezer for at least 8 hours.

I’m having trouble getting them out of the mold! HELP!!

Don’t yank on the popsicle sticks! Gently run the molds under hot/warm warm for a few seconds at a time until popsicles can gently be pulled from the mold.
