I’ve flaked a bit on going to the gym lately. I blame it on Christmas and work schedules. Well…. blog work anyways. My office schedule has pretty much been smooth the past week but it seems where the office didn’t pile on the work other activities and people filled those time slots pretty quickly. But this weekend I got back into the swing of things and got to the gym Saturday and Sunday! I always feel so much better when I can get in a few miles on the treadmill. The rest of my weekend included using up holiday leftovers and working on New Years Appetizer ideas!

I have been able to get a few recipes made even with the crazy holiday schedule! One of those recipes would just so happen to be this appetizer that I’m sharing with you today. I made Chicken Ranch Stuffing Bites for you! 🙂 You’re welcome.

After the gym one evening, I went over to Walmart to grab what I needed for these Chicken Ranch Stuffing Bites. You won’t need much to make them and they’re pretty simple to put together! These Chicken Ranch Stuffing Bites are a great way to use up leftover stuffing from the holidays or use Kraft Stove Top Dressing (which is ready within 5 minutes) and make these any time of year! These little bites are going to make for the perfect New Years Appetizer and they’re made with  ingredients that you probably already have at home.

What you’ll need:

1 pound chicken tenderloins (or breasts), boneless and skinless
1/3 cup Kraft Ranch Dressing
4 tablespoons Kraft Mayo
1 box Kraft Stove Top Dressing (1.5 cups water & 4 tablespoons butter)
1/2 cup Kraft Shredded Cheese
2 cups finely diced mushrooms
2 rolls of crescent rolls (8 rolls in each can)
Salt and Pepper to taste
Olive Oil

Preheat oven to 350F.
Drizzle some olive oil in a baking dish. Place chicken tenders in  in the baking dish; season the chicken with salt and pepper.
Bake at 350F for 30 minutes or until chicken is done.
While the chicken is baking, dice the mushrooms. I put my mushrooms in a food processor to make the pieces super small.

Heat a skillet on medium heat with a but of olive oil. Add diced mushrooms. Cook until done.
Remove from heat and set aside.

In a sauce pan heat 1.5 cups of water and 4 tablespoons of butter. Boil and add Stove Top Dressing. Stir. Cover and remove from heat.

Let sit 5 minutes and fluff with a fork.

Remove cooked chicken from oven and let cook. Shred chicken and add to a large bowl.
Add ranch dressing and mix together.

Add in the mushrooms and Stove Top Dressing. Mix well.
Add in the mayo and mix well to combine.

Add in the cheese. Mix Well.

Open the crescent rolls. Working with one triangle at a time, use a rolling pin to roll over the crescent roll once or twice to flatten it a bit.
Cut the crescent roll triangle in half longways.
Add a teaspoon of filling to the large part of one of the crescent roll triangles.

Roll the filling up into the crescent roll, pinching the sides to keep the filling in.

Sit Chicken Ranch Stuffing Bites into a mini muffin pan (or carefully on a sheet pan).
Continue until all have been made.

Bake at 375 for 10-11 minutes or until golden brown.

Ok, if you do food photography (or really any photography) do you ever snap a photo of something you’ve made and then think “Ohh that reminds me of so and so’s blog and photography” – well that photo above made me think of the White On Rice Couple blog. I know my photography is NOWHERE near theirs but it reminded me of them for some reason 🙂 I think maybe it was the background.

But back to these Chicken Ranch Stuffing Bites! After they’ve cooled just a touch,
serve them with Kraft Ranch Dressing for dipping and enjoy! These kind of remind me of hushpuppies haha; Flakey Hushpuppies with a ranch chicken filling! 🙂

Chicken Ranch Stuffing Bites                                             (Click To Print)

Ingredients

Yields: 24 Chicken Ranch Stuffing Bites with the 2 rolls of crescent dough (but makes about 6 cups of filling, one cup of filling will make 48 bites) * High amount since this is a party food but cut the ingredients in half or make larger Chicken Ranch Stuffing Bites for a smaller crowd)
