Chocolate Fudge Stuffed Chocolate Chip Cookies

Because Chocolate Chip Cookies are not sinfully, perfect or just awesome enough on their own, these have chocolate fudge stuffed into the middles. These little beauties are the result of me making Oreo Stuffed Cookies for one of Hubby’s friends and having extra chocolate chip cookie dough after running out of Oreos.
I also had the need to use some Valentines Candy that was just hanging out and tempting me on the kitchen counter. What better way to show that candy that I don’t need it?
Stuff it into a cookie and give it away 🙂
It’s kind of like re-gifting…. just not as noticeable.
I mean really… who doesn’t want a Chocolate Fudge Stuffed Chocolate Chip Cookie?
Ok… maybe a chocolate hater, or people like me that are trying to eat better, or perhaps … a chocolate hater…..
*le blank stare*
And Because I’m not cool enough to actually make this up on my own, I need to direct you over to Jenny’s  Picky Palate. She’s the one that first posted about Oreo Stuffed Cookies , then she made Candy Bar Chocolate Chip Cookie , then Itty Bitty Oreo Stuffed Cookies and I’m pretty sure.. yep.. she even made Brownie Stuffed Chocolate Chip Cookie…

 

So What does this mean? Well, first it means that Jenny is pretty awesome and second it means that you can use this dough recipe to pretty much make anykind of “Stuffed” cookie that you want!
Except for maybe Carrot Stuffed Cookies or Eggplant stuffed Cookies…
You get my point….Right?

 

 

I changed up the ingredients just a tiny bit from her’s but that’s about it.
Chocolate Fudge Stuffed Chocolate Chip Cookies
Original Oreo Stuffed Cookies  from Jenny at Picky Palate

Makes about 24 Cookies

What you need:

1 cup butter (2 sticks)
1 cup  brown sugar
1 cup sugar
2 large eggs
2 tablespoons vanilla
3 3/4 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups chocolate chips
24 Pieces of Fudge Chocolate Candy, unwrapped, I used Chocolate Fudge Hearts

What you do:

Preheat oven to 350F.

In the bowl of a stand mixer, mix the butter and sugars until well combined. Sugars Will be smooth and creamy when done mixing.
(You can use a hand mixer, but I always find it easier to make cookie dough with the Kitcheaid Stand Mixer)

Add in the eggs one at a time and mix in the vanilla. Mix until well combined.

In a separate bowl mix together the dry ingredients:  flour, salt and baking soda.

With the mixer on the lowest setting, slowly add all of the dry ingredients into the mixing bowl with the wet ingredients. Mix well!

Add your chocolate chips and stir to combine. (I stir them in with the mixer)

Using a medium scoop take one scoop of cookie dough and place in onto a prepared baking sheet. Place a chocolate fudge candy into the middle of the cookie and top with another scoop of cookie dough.

Press edges together to seal the chocolate fudge candy inside.

Continue with all of the cookie dough and chocolate fudge candy.

Bake for about 10 minutes.

Let cool for about 5 minutes and then transfer the cookies to a cooling rack to cool completely.
