Chocolate Peanut Butter Crunch Brownies

75 Degrees! 75! That’s what the temperature was outside this afternoon when I took the puppies walking. I am so in love with fact that the weather is warming up. Something about the warm weather and sun on my face when I’m outside just makes me so happy.  Apartment life also makes me happy, I think that us moving into this apartment downtown might be one of the best things we’ve ever done together.

Now that the weather is warming up people are out and about downtown and I love it. Out on our walk this afternoon I passed quite a few people that were riding bikes and walking, once we made our loop from the trail and got to the the fountain there were little kids running and laughing while people were coming and going from the restaurants around the square.  There was so much life downtown that hasn’t been there in the past few months; normally when I’m walking downtown it’s quite and lonely.

Half way back to the apartment, I spotted Thomas jogging up the street to meet us. Once we made it back to the apartment, we ran into a few neighbors and the owner of the coffee shop, we stopped for a quick hello and let the dogs visit for a second before we made our made back up the apartment to start dinner.

I told Thomas that I can’t wait to see more people out and about around the apartment and downtown now that the weather is getting warmer. It’s going to be so nice to not be secluded in a house or neighborhood where no one comes out of their house. I got to do another “apartment thing” yesterday. haha I finished dinner and ran across the hall to our neighbors apartment to drop off a big bag of these Chocolate Peanut Butter Crunch Brownies!

YAY! I’m finally living in a place where I have lots of neighbors to drop off food to! haha I mean of course when I make stuff for the blog I normally send a lot to work with Thomas and I take some to my own office to share but now I’ve got a whole apartment building to pawn off treats on.

I’m not sure how far I walked today with the dogs but I think that it was enough to earn me one of these Chocolate Peanut Butter Crunch Brownies! I’ve been so good with my whole “low carb” eating thing lately but I had to give in tonight. I needed one of these Chocolate Peanut Butter Crunch Brownies, I figure after our long walk and after the super healthy dinner we had, one little brownie wouldn’t hurt.

So the recipe for these Chocolate Peanut Butter Crunch Brownies came right out of my Ma’s old recipe box. I’ve been digging through her recipe box, separating the hand written recipes from the clipped one. It’s been wonderful to read through them and imagine my grandmother taking the time to sit down and write these out or wonder what she might have been thinking about when she was clipping certain recipes out of the paper.

I don’t remember her making these Chocolate Peanut Butter Crunch Brownies but I’d like to imagine that she stored this little recipe in her wooden recipe box with the intention of making them for her kids or grand kids. Maybe she added them to her recipe box when my brother and I were little so that she could make them for us one weekend or perhaps they were added way before that.

 

Either way, I’m glad she saved it because we love them!

Chocolate Peanut Butter Crunch Brownies

Chocolate Peanut Butter Crunch Brownies

Chocolate Peanut Butter Crunch Brownies Homemade Chocolate Brownies with a marshmallow creme layer, topped with a layer of peanut butter chocolate crisp cereal.

  • Prep Time: 15m
  • Cook Time: 40m
  • Total Time: 2h
  • Yield: 25 large brownies
  • Category: Brownie, dessert

Ingredients

  • 2 sticks of butter, softened (1 cup)
  • 2 cups milk chocolate chips (12 oz bag)
  • 1 cup creamy peanut butter
  • 7 ounces marshmallow creme
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup flour
  • 6 tablespoons baking cocoa
  • 4 eggs
  • 2 cups white sugar
  • 3 cups crispy rice cereal

Instructions

  • Preheat oven to 350F.
  • In the bowl of a stand mixer, cream together the butter and sugar until fluffy.
  • Beat in eggs on at a time.
  • Mix in the vanilla.
  • Pour in the flour, cocoa and salt, mix on low until everything is combined.
  • Line a 9 x 13 pan with parchment paper and pour brownie mix into pan. Spread out the batter.
  • Bake for 30 minutes or until done.
  • Cool completely.
  • Spread marshmallow creme over cooled brownies.
  • In a small saucepan, melt peanut butter and chocolate chips together over low heat. Stir constantly until smooth.
  • Stir in the cereal and toss until all of the cereal is coasted.
  • Spread over marshmallow cream.
  • Refrigerate until firm and then cut into squares

    I love parchment paper but do not normally use it for baking brownies (or cookies, for that matter)–when you say to line a 9×13 pan with parchment paper, would that be cutting it to fit just the bottom of the pan or having enough parchment paper to hang over the edges to lift out the brownies when done? I’m thinking it’s the first way, but like I said: I’m a baking with parchment paper newbie! 🙂 Thanks!

      Hey! You can do it either way. I like to have it over the rim so hat I can lift them out easy.

      Hey Tina,
      Without being there with you when you made them I don’t know if I can troubleshoot very well but I would guess just from the description that maybe there was too much flour or cocoa added? Did you level the cups once you scooped the flour and cocoa or did you just scoop and mix? 🙂 I’ve made this quite a few times and I haven’t had them turn out cake like but if I run across that issues in the future I’ll try to figure out why.

      They don’t have to be but I do store my in the fridge just because we can’t eat a whole pan. However, the ones I’ve taken to my husband’s office, sit out at room temperature in an container or bag for a day or two and are fine.
