Chocolate Peppermint Poke Cake is filled with everything you love about the holidays but it’s also easy enough to make without any fuss!
Poke cake, what a weird name for a cake. I suppose it gets it’s name from the fact that you have to poke a bunch of holes in it before you top it with pudding but I still think that it’s an odd name for a cake.
So what’s a poke cake? Well, it’s like this, you bake a cake, any cake you like but for this recipe I baked a chocolate cake. You can use a boxed mix or your favorite from scratch cake, either will work here. I went with the boxed cake because that’s just how I’m rolling with this one.
So, after you’ve baked the cake you’re going to need to let it cool.
Once it’s cooled you’re going to need to take a wooden spoon and poke a bunch of holes into the top of the cake.
Now you’re going to want to make some pudding. Again, this can be boxed instant pudding or pudding from scratch. I support either decisions that you make, just make it.
If you’re making this Chocolate Peppermint Poke Cake you’ll probably want to add in a little peppermint extract to the pudding too.
Now mix the pudding but before it gets too thick pour it all over the top of the cake. Since the pudding isn’t super thick yet it’ll seep down into to the cake.
Go ahead and stick the cake into the fridge and let it sit there for about 2 hours.
After the two hours are up, remove the cake from the fridge and top it with thawed Cool Whip (or your favorite whipped topping).
That’s right, the frosting for this cake is whipped topping. I can’t lie, I can totally eat whipped topping by the spoonful!
After you’ve got the entire cake covered in whipped topping sprinkle the top of the cake with mini chocolate chips and peppermint chocolate chips.
I found the red and while peppermint chocolate chips in the baking section of our local grocery store and I’ve also seen them in the holiday baking section.
Ps. don’t forget to keep this cake in the fridge because of the whipped topping frosting.
So, obviously this Peppermint Poke Cake isn’t the only kind of poke cake.
I’ve also made a Chocolate Banana Poke Cake and I’ve got a little list going on of more poke cake ideas that’ll probably be coming to the blog in the future.
But before we got to the recipe, I just wanted to take a second to show you some of the pictures from this weekend. On Saturday I got up and took a walk from the apartment up to Main Street and Millionaires Row to snap a few pictures of the Christmas decorations.
It was so nice to just walk, relax and take photos of whatever I wanted. I walked almost 3 miles and got in just over 7,000 steps logged on my fitbit. That’s pretty nice for a Saturday morning in my opinion. 🙂 I can’t begin to tell you how much I love the fact that I can walk to Main Street from our apartment.
So up there, that’s a beautiful Christmas tree in front of one of the stores downtown. We saw it the other night when we went downtown for the lighting of the Christmas Lights on Main Street but it was even more beautiful during the day so I needed to grab a picture if it. <3
This one is from a store front window from one of the shops on Main Street. There is a little shop at the end of Main Street that’s stocked full of handmade items for your house. I didn’t even know this little store was down there and I can’t wait to go check it out when they’re open.
Oh, and this little beauty? Just one of the gorgeous gas lanterns and Christmas wreaths on the building down the street from our Apartment.
Ok, Ok, I won’t take up too much of your time. I know you’re busy and that you really came for the Chocolate Peppermint Poke Cake but I just loved these photos so much that I wanted to give you a little peak into my Saturday.

Chocolate Peppermint Poke Cake

Chocolate Peppermint Poke Cake
Chocolate Peppermint Poke Cake is filled with everything you love about the holidays but it's also easy enough to make without any fuss!
Ingredients
- 1 box devils food chocolate cake mix
- Red and White Peppermint Chips
- 1 cup mini chocolate chips
- 1 large tub of cool whip
- 1 teaspoon peppermint extract
- 3 cups cold milk
- 1 large box of instant vanilla
- 3 Large Eggs
- 1/4 cup Vegetable Oil
- 1 cup water
- Two-quart baking dish **You can use boxed cake mix or your very own homemade chocolate cake**
Instructions
Pre-heat the oven to 350F.
In a large bowl, mix the cake mix, water, oil and egg. Beat until smooth.
Pour into a two quart baking dish and bake for about 30 minutes or until done.
Let the cake completely cool.
Once the cake has cooled, use the end of a wooden spoon and poke holes all over the cake.
In a large bowl, whisk the vanilla pudding and milk until the pudding thickens just a bit. (not too much or it won\'t soak in). Whisk in the peppermint extract.
Spread the pudding all over the top of the cake. Place into the fridge and let sit for 2 hours.
Remove from the fridge after 2 hours and top the cake with the cool whip.
Sprinkle the top of the cool whip with the red and white peppermint chips and mini chocolate chips. Refrigerate until ready to serve!
I love that you’re able to step out your apartment door and walk to your charming downtown area. I’m so jealous of that. I think I’d probably do that everyday if I could, but it’s especially nice during Christmas. Your poke cake looks yummy. All those colorful chips on top make it look so festive.
I’ve never made a poke cake but I have a friend who makes and brings one to every party and it’s so good! I love that they’re so easy to make, this recipe would be great for our upcoming Christmas party!
