Chocolate Marshmallow Pies like the Little Debbie Chocolate Marshmallow Pies or Moon Pies have been around for years but it wasn’t until this year that I decided to make my own at home! I first made homemade marshmallows years ago, so it just took a little trial and error for the graham cracker cookie.
Before I knew it, we had a stack of lovely homemade, Chocolate Marshmallow Pies!

- unsalted butter
- Dixie Crystals Light Brown Sugar
- egg
- all-purpose flour

- water
- unflavored gelatin
- large egg whites

- milk chocolate candy melts
- dark chocolate candy melts

How to make Copycat Little Debbie Chocolate Marshmallow Pies:
- Making the Marshmallow layer
This is the first step for these marshmallow cookies because the marshmallow will need to sit overnight.
Prepare a 9×13 pan with some parchment paper and cooking spray. -
Our first sauce pan is going to hold the white sugar, corn syrup, and water . You’ll want to whisk this together and cook it over medium heat, stirring, until sugar is dissolved. Once it starts to boil, stop stirring.

You’re going to want to cook this sugar mixture to 260F on a candy thermometer. Then take it off the heat.

While the sugar is cooking, start on the gelatin. Sprinkle gelatin over 3/4 cup water in a metal or glass bowl. Let gelatin stand 5 minutes without moving it.

Set that bowl over a pot of simmering water to create a double boiler and heat over medium heat.

Whisk until gelatin dissolves.

Beat egg whites in bowl of an electric mixer with a whisk attachment until stiff.

Whisk gelatin mixture into sugar mixture VERY slowly. Mix on high speed for 15 minutes, until very thick.

Pour marshmallow mixture into the prepared 9×13 dish and spread smooth as you can get it.

Let it sit uncovered for 8 hours to dry.
- For the Cookies:
Follow the recipe for the cook dough and then plop it out onto the counter. Cookie dough will be crumbling, so use your hands and the heat from your hands to work it into a roll-able dough. I have best results, working with small pieces at a time.

Roll out dough and cut out cookies with the 2.5 inch scalloped cookie cutter. You want these cookies to be about 1/4 thick.
- Baking Cookies
Preheat oven to 350F.
Place cookies onto a prepared baking sheet. -
Using a skewer or a fork, poke a few holes into top of cookies.

Bake cookies for 8 minutes! Remove from oven and let cool.
- Cutting Marshmallows
Remove marshmallows from pan and cut out 12 marshmallows with 2.25 inch round cookie cutter. Dip cutter into powdered sugar if it gets too sticky. Cut marshmallows into desired thickness.
- Building Marshmallow Pies
Add marshmallow disc inside of two cooled cookies.

Melt chocolate candy melts according to package directions.

Dip and coat each sandwich cookie into chocolate.

Tap off excess chocolate and then place on a piece of parchment paper to harden.
Frequently Asked Questions
You can use any color candy melts or almond barks
I haven’t tried that with this recipe.
