Doughnut Muffins

Doughnut Muffins

(Printable Recipe Here)

What you need

1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup oil
3/4 cup milk
3/4 cup sugar
1 egg

1/2 cup butter, melted
1/3 cup sugar

What to do:

Preheat oven to 350 degrees. Spray your muffin tins with cooking spray. Mix 3/4 cup of sugar with 1 egg in a mixer. Combine flour, baking powder, salt, and cinnamon in a medium bowl. Add to sugar and egg mixture. Add oil and milk. Mix to combine. Fill your muffin tin all the way to the top to get that nice round top.

Bake at 350 degrees for 15-20 minutes. While muffins are baking, melt butter in a small bowl.
Shake muffins out of the muffin tin while the muffins are still hot. BE CAREFUL
ITS HOT
!!
Dip tops muffins in the melted butter, then us a basting brush to wipe the butter onto the sides. Now roll around in the sugar.

Place on a wire rack and allow to cool.

Makes 12

    I make these all the time, sometimes I add cinnamon to the sugar that they’re rolled in. Chocolate you increase oil to 1/2 cup and use 1/4 cup of cocoa powder.

    I filled the tins to the top and they overflowed…and all the muffin tops fell off when I tried to get them out!
