Disney World cupcakes are some of the cutest desserts at Disney and I love seeing all of the different designed and decorations when we are there. Almost every resort, food court and bakery has some type of themed cupcake. Plus they’re holiday and event cupcakes are so super cute!
When we were at Disney World a few weeks ago the had the most beautiful Rainbow Mickey Cupcakes at Goofy’s Candy Company and Main Street Confectionery. I’m assuming that they are there for Saint Patrick’s Day but they might be there all year, I’m not sure. Either way, they’re beautiful and I knew that once I saw them I had to recreate them at home.
I bought my best friend a pair of Rainbow Mickey Ears because she loves all things Rainbow and I knew she would LOVE these too!
What you’ll need for Homemade Mickey Mouse Rainbow Cupcakes: (all ingredients and amounts below in recipe)
- Cupcakes (Recipes below)
- Frosting (recipe below)
- Orange gel food coloring
- Yellow gel food coloring
- Red gel food coloring
- Green gel food coloring
- Blue gel food coloring
- Purple gel food coloring
- Melting Chocolate
- Piping Bags
- Large Star Piping Tip
- Parchment Paper
- Plastic Wrap
This is the gel food coloring set that I’m currently using.
Making chocolate Mickey Ears for cupcakes:
Now, these Rainbow cupcakes would still be gorgeous without the Mickey ears but we’re here to make Mickey Mouse Rainbow Cupcakes so we’re going to need some Mickey Mouse ears for said cupcakes.
They’re super easy to make.
Just melt down a bit of melting chocolate according to the package directions. Let it cool for just a minute or so and then pour it into a piping bag. Cut a small hole and pipe circles onto parchment paper. You’ll want the circles to be somewhere between the size of a nickle and a quarter.
Let them dry for 10-15 minutes.
How to make rainbow swirls for rainbow cupcakes:
These rainbow swirls in the frosting is the key to making these Homemade Mickey Mouse Rainbow Cupcakes the best ever.
Now you may be tempted to put all 6 colors into the same piping bag and swirl the icing like that. Don’t! Don’t do it that way, we’re going to go these Mickey Rainbow cupcakes just like the Rainbow Cupcakes at Walt Disney World and these swirls are going to be done in two sections.
First we’re starting with the red, orange and yellow frosting.
Lay a piece of plastic wrap onto a flat surface. Pipe strips of red, orange and yellow frosting onto the plastic wrap. Then roll the frosting over onto itself, using the plastic wrap to guide it.
Roll it into a tube but make sure the plastic wrap is all on the outside, don’t wrap the plastic wrap into the frosting. You just want it to be a case for the frosting. Twist the ends and then use a pair of scissors to snip one end of the bag.
Slide that down into a piping bag that’s been fitted with a large start tip.
Now it’s time to add the first layer of rainbow frosting onto the cupcake.
Swirl the red, yellow and orange icing onto the cupcake, about 2 layers high.
Now it’s time to do the same things with the green, blue and purple frosting.
Again, lay a piece of plastic wrap onto a flat surface. Pipe strips of green, blue and purple frosting onto the plastic wrap. Then roll the frosting over onto itself, using the plastic wrap to guide it. Twist the ends and then use a pair of scissors to snip one end of the bag.
Slide that down into a clean piping bag that’s been fitted with a clean large start tip.
Pipe 2 smaller layers of frosting swirls on top of the orange swirls to finish the frosting.
Adding chocolate Mickey Ears:
Last but not least it’s time to add the chocolate Mickey ears to the Rainbow cupcakes. Just stick two chocolate ears into the top of the cupcake to mimic Mickey Mouses ears.
