Chocolate Crackle cookies with a minty twist for the holidays! These Mint Mocha Crackle Cookies would be perfect for Santa!

This is our first year that Santa gets to visit our house! Yes, my baby is only 3 months old, NO I don’t care that he’s only 3 months old! haha I’ve been waiting for this for so long that Santa WILL be making a stop at our house this year.
Fun Fact, when I was about 2 months pregnant with our little guy I woke up in the middle of the night thinking about Christmas and got so excited that I woke up Thomas and said, “THOMAS!! Guess what!!! Santa gets to come to our house this year for Christmas!!! Ahhhhhh” He looked at me like I was crazy, smiled and told me to go back to sleep. hahaha
So obviously, we’ve got to make cookies for Santa right? Originally Santa requested Snicker doodles for our house but I think that he mind might change after he gets a taste of these tasty treats!

Tonight while we were at my parent’s house for dinner, I found the old cookie plate and milk mug that my brother and I used for Santa’s cookies and milk growing up. Y’all better believe those precious items followed me home for us to use! That little Santa plate is going to be probably be filled with these Mint Mocha Crackle Cookies this year!

These cookies are nice and crisp on the outside but oh so soft and chocolaty on the inside. Plus they have the perfect amount of mint flavor thanks to the mint extract and the mint chocolate chips!
Speaking of the mint extract, don’t worry if the batter smelled super minty! Some of that will bake out of these cookies in the oven and they’ll be perfect!
Ingredients For Mint Mocha Crackle Cookies:
- 2 cups white sugar
- 4 eggs
- 1/2 cup vegetable oil
- 4 tablespoons of butter, melted
- 2 teaspoons of mint extract
- 1 cup cocoa powder
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 12 ounces mint chocolate chips
- 2 cups Powdered Sugar

How To Make Mint Mocha Crackle Cookies:

In stand mixer, combine white sugar and eggs.

Add remaining wet ingredients and mix well. Add dry ingredients (except for powdered sugar) and mix until well combined.

Dough will be wet and sticky. Chill for 2 hours.

Preheat oven to 350F.

Once chilled, use a spoon or a small scoop to make round dough balls. Roll the cookie dough balls in powdered sugar.

Place dough onto cookie sheets lined with parchment paper or baking mats.

Bake at 350F on parchment lined baking sheets for 8-12 minutes.

Cool on wire rack.

These cookies look perfect for Santa and the holidays! My mom just gave me the Santa plate we used to use as kids so I can use it with my twins now! So fun.
