Back in May, I drove down to Raleigh, NC to meet up with my friend Brittani for a day of food truck madness! I had seen seen her post on Facebook not to long before that about the Food Truck Rodeo in Raleigh and I immediately messaged her and told her that I wanted to go!
It was my first time attending a Food Truck Rodeo event and I fell in love with it!
I mean come on! Food Trucks pretty much take over downtown Raleigh for this thing! What’s not to love?!
Before we even got there she was telling about this “Cookie Ice Cream Sandwich that was as big as her head!” and how we had to get one. She pretty much told me that although all the food was amazing that as long as she got this cookie ice cream sandwich all would be right in her world. haha.
So after we parked we trucked it down the road to the Food Truck Rodeo and went on the hunt for the giant cookie sandwiches!
Soon we were standing in line for the “Ice Queen Truck”, digging out our money and getting ready to devour our first treat of the day!
Brittani was right! These Cookie Ice Cream sandwiches were monsters! They were huge but oh my word they were fantastic!
So like the good little food blogger that I am, I made myself a note to recreate them annnnnnd forgot to do so. hahaha
But when BigBear and I were in the store the other day with my niece picking out ice cream, I remembered those ice cream cookie sandwiches and decided to give them a go at home!
When we were at the Food Truck Rodeo and visiting the “Ice Queen Truck”, I got a “Kermit”.
It was a huge ice cream cookie sandwich with 1 scoop of mint chocolate chip ice cream, 1 scoop of cookies and creme ice cream and it had an oreo cookie smashed in between the ice cream layers!!
Whoa!
So I changed it up just a tad.
Mine isn’t quite as huge (dangit!)
I still used the Mint Chocolate Chip Ice Cream but I changed out the Cookies and Creme for Chocolate Brownie Bit ice cream!
Oh, and I changed out the regular oreo for a S’mores oreo.
It was heaven.
The best part about these? They can be made to suit any taste preference!
I made a few of these at once, wrapped them in plastic wrap and squirreled them away in the freezer for when I’m ready for an ice cream treat!
Now you can make these completely from scratch if you want to or you can make them from pre-made ice cream and pre-baked cookies. I’m not going to judge you either way!
You’re going to need:
- Big Soft Chocolate Chip Cookies
- Mint Chocolate Ice Cream
- Oreos (or S’more Oreos!)
- Chocolate Brownie Ice Cream

The point is, no matter how you make them, you need to make them asap!
Ps you’re gonna need a cookie cutter that’s the same size as your cookies….
And you’re also going to need some plastic wrap for making and storing these 🙂

Mint Chocolate Ice Cream
Oreos (or S’more Oreos!)
Chocolate Brownie Ice Cream
You’re going to build your ice cream cookie sandwich layers inside of the cookie cutter and then wrap them in plastic wrap to re-freeze.
For the 1st layer, press one cookie down into the cookie cutter, (the underside should be facing up).
Fill the cookie cutter with mint chocolate ice cream. Press an oreo into the center of the ice cream.
Wrap the plastic wrap over the top of the ice cream, press the cookie and ice cream out of the “mold” and fully wrap it tight. Place into the freezer.
For the second layer, add another layer of plastic wrap over the cookie cutter. Press another cookie into the “mold” and fill the cookie cutter mold with the chocolate brownie batter ice cream.
Wrap the plastic wrap over the top of the ice cream, press the cookie and ice cream out of the “mold” and fully wrap it tight. Place into the freezer.
Continue doing this until you have as many top and bottom layers as you need.
Let them freeze for about 10-15 minutes.
Working Quickly, remove the top and bottom layers of the cookie sandwiches from the freezer. Unwrap them and press 1 top layer and 1 bottom layer together.
Wrap entire cookie sandwich in plastic wrap and place back into the freezer until ready to serve!

I have never been to a food truck rodeo – and you have me wanting to attend one NOW! We have so many food trucks here in DC, it’s definitely an idea 🙂 I love your sammie – a great summertime dessert.

I want to go too! You’d better believe I am looking for a food truck rodeo. Your rendition of the Monster Ice Cream Cookie Sandwich is fantastic! I’d have to use the non-dairy ice cream but it is doable. Oreos are vegan – Woohoo!
