Mushroom, Toasted Fennel and Sausage Stuffing

For some reason all I can think about right now is having the mantel stocked full of pumpkins, mums and colored leaves.  I’ve secretly been looking forward to this since August. 

I think something’s wrong with me. Normally Halloween is my main holiday and normally I start decorating and planning out Halloween stuff way in advance. This year however, I just couldn’t get into it. Maybe it was because half of the house was still packed in boxes or maybe it was because we just had so much going on, I’m not sure what it was but this Halloween Queen was off of her game this year.  

I may have been off the wheel when it came to Halloween this time but I’ve got Thanksgiving wrapped around my little finger. I’m telling you, I’ve quietly had Thanksgiving and Fall on my mind for the past few months.  It’s only the first part of November and I’ve already got 75% of my Thanksgiving day menu planned out; This is totally unlike me as I’m normally planning my Thanksgiving menu about 2 days beforehand.

My dad is always in charge of the Turkey and while he does like to play around with spices and brining techniques the day of Thanksgiving, the turkey always comes out perfectly. My mom and I are normally in charge of the side dishes, my husband will make the sweet potatoes, my brother’s fiancee will bring a pumpkin pie from her dad, and my brother will show up in time to eat. 🙂 haha. 

One of the dishes that I promised myself that I would “amp up” last year was our stuffing. I love stuffing but I always feel like it’s lacking something. It’s just kind of “normal’. I wanted something a little more extraordinary this year. 

So this year I’m working with Jones Dairy Farm to bring you a new stuffing recipe that will be gracing our Thanksgiving table this year. I tried out a few ideas and in the end we ended up with a Mushroom, Toasted Fennel and Sausage Stuffing.  

 I was a little cautious with the fennel at first because I didn’t want to have a super strong licorice flavor and the first few times that I worked on this recipe that’s exactly what I got. However, after a few more tries I got it right and we had the perfect flavor combination for an epic stuffing. 

This stuffing is full of Sausage, garlic and mushrooms with just enough toasted fennel and saffron to really bring it over the top with an amazing, savory flavor.

Their family recipe for breakfast sausage is the same recipe from the 1800s. You know the farmhouse on the package? 

That’s the family farm house! How cool is that? Y’all know that the history nerd is me is loving that. How awesome would it be to visit there!
