Recipes like Salmon and Carrots Sheet Pan Meal are a lifesaver when I need something simple and fast for the dinner table. I’ve also loved making this recipe on Sundays when I’m meal prepping for the week.
Everyone in the family loves this oven baked salmon, even our 16-month-old Jackson loves it. He also a huge fan of roasted carrots, but who could blame him! They’re delicious!
What you’ll need for this recipe:
- Peeled carrots
- Salmon fillets
- Olive oil
- Garlic powder
- Italian Seasoning
- Black Pepper
What seasonings to use:
This is part of the recipe that you can play with a little to make it your own. When I bake salmon I normally stick to garlic powder, black pepper and some kind of Italian seasoning. Sometimes I just season it with salt and pepper then there are other times that I marinate it.
This is the Italian Style Seasoning that I’ve been using lately and I’ve kind of fallen in love with it. You don’t have to use this exact one but if you’re looking for it, I found this one at Walmart.
I also know a lot of people squeeze fresh lemon juice on the cooked salmon as well! (I don’t because I’m not a fan but a lot of people love it!)
Skin on, please:
While you can eat salmon skin, I choose not to. However, I do recommend buying salmon with the skin on. Baking the salmon with the skin on helps to keep the salmon from drying out. Once it’s cooked, I either use a spatula or knife to carefully pull the skin off or I just eat around it.
Is the Salmon done??
According to the FDA, salmon is done when it reaches an internal temperature of 145°F.
You can check this with an instant-read thermometer in the thickest part of the fish. Or you can check it how I do and just use a fork to check to see if the salmon is flaky. Salmon should flake fairly easy once cooked.
Why Roasted Carrots?
I picked roasted carrots as my side when I make this oven baked salmon because I can bake everything on the same sheet and because they bake at the same temperature.
Of course, you can try different vegetables and you can always bake the salmon alone and cook the vegetables separate!
FAQs
Do I have to use foil? You don’t have to, but it makes for easy cleanup and it keeps the salmon juices from running into the carrots while they’re cooking.
Can I cook the salmon longer/shorter? You sure can! Just remember that the FDA says that salmon is done/safe to eat when it reaches an internal temperature of 145°F.
Do I have to peel the carrots? No. You don’t have to. If you want to leave the peeling on you can, just make sure they’re very clean. Although I think carrots taste better when peeled. You could also use baby carrots!
Does the Salmon have to come to room temperature before cooking? It doesn’t have to BUT it will cook more evenly if it does.
Can you use frozen salmon? Yes, but it needs to thaw in the fridge first.

Oven Baked Salmon and Roasted Carrot Sheet Pan Meal
Oven Baked Salmon and Roasted Carrot Sheet Pan Meal - Oven Baked Salmon may be one the easiest meals to make during the week plus the main dish and side dish cooks together!. This recipe is great for a weeknight dinner and it is perfect for meal prepping on Sundays!
Ingredients
- 1 pound carrots, peeled
- 4 Salmon fillets, about 6 oz each
- 4 tablespoons olive oil
- 1/2 teaspoon garlic powder for carrots & 1/2 teaspoon garlic powder for salmon
- 2 teaspoons Italian Seasoning
- Black Pepper
Instructions
Preheat oven to 425F.
Line a rimmed baking tray with aluminum foil.
Set Salmon filets on the counter to come to room temperature for 15-20 minutes while working on carrots.
Cut carrots in half and then in half lengthwise.
Place carrots on half of the baking sheet. (leave the other side open).
Use a few pieces of foil to create a basket/bowl that fits into the open space. This is where the salmon will cook later.
Remove foil basket and set aside.
Add 2 tablespoons of olive oil, 1/2 teaspoon garlic powder and 1 teaspoon Italian seasoning to carrots. Sprinkle with a few dashes of black pepper. Toss to coat.
Cook in a preheated oven for 15 minutes.
While carrots are cooking, place salmon filets in the foil basket.
Drizzle with olive oil and season with the remaining seasonings. Sprinkle with a few dashes of black pepper.
Once carrots have cooked for 15 minutes, add foil basket of salmon to the sheet pan.
Cook 15 more minutes.
