Are you a fan of pineapple upside down cake? If so, I know you’re going to be peachy keen over this homemade Peach Upside Down Cake topped with brown sugar, melted butter and fresh peaches!
This post and recipe sponsored by Dixie Crystals but as always all opinions are 100% mine.
My first memory of “upside down cake” comes from my teenage years. Perhaps I had had some kind of fruit upside down cake before that but I don’t really remember.
But I do remember Pineapple Upside Down Cake at my cousin Rachel’s house when I was about 16 or 17.
Why? Well it’s kind of a small little thing in the scheme of life haha but one afternoon I drove over to Rachel’s house to pick her up so that we could go out.
I remember sitting in her kitchen and she said, “Before I can leave, Mom wants me to make a pineapple upside down cake and put the clothes int he dryer.”
I remember scrunching up my nose and thinking, “that’s a weird request.”
My mom never asked me to do laundry and she certainly never asked me to make a cake hahaha.
But there I sat, in Rachel’s kitchen while she measured ingredients, sorted through pineapple slices and cherries while making the cake her mom had asked for before we went out.
Now, even in my 30’s, whenever someone mentions pineapple upside down cake or peach upside down cake, my first though it of Rachel. haha 🙂
This is a Peach Upside Down Cake not a pineapple upside down cake. It still holds true, every time I see this Peach Upside Down Cake I think of her and that pineapple cake. Which reminds me that I need to make a pineapple cake soon!
But onto this Peach Upside Down Cake!
I used fresh peaches for this cake but you may be able to use frozen peaches. If you use frozen peaches or canned peaches you’re going to want to make sure they are room temperature, drained and patted dry before you use them.
I used the boil and peel method to peel these beauties but you can just peel them with a knife if you want to.
I’ll try not to make the explanation too long but this is how you do the boil and peel method.
Boil some water in a sauce pan.
Cut a X into the bottom of the peaches.
Toss one into the boiling water (ok gently place it, don’t really toss it in there).
Let it boil for 30 seconds.
Remove and place the peach into a bowl of ice water.
Count to 20 and then rub the peach skin off.
Sometimes this works like a charm and then sometimes the peaches are not ripe enough and this method won’t work. However if it does work, you get smooth, naked peaches!
Then just slice those beauties up and get ready to make your cake!
Don’t forget that this is a Peach Upside Down Cake! It’s UPSIDE DOWN when you make it!
Your brown sugar and butter mixture will go in first and then you’ll lay out your peaches.
Then you’ll top the peaches with the cake batter.
After the cake bakes, you’ll flip it over and have a beautiful, peach topped Peach Upside Down Cake!

Don’t hv a cast iron skillet. Can I use a regular round cake pan?
Hey! You sure can 🙂
The recipe ingredients list baking powder but the instructions say soda. Which one??
