Last Sunday was Big Bear’s 31st Birthday. Thankful he was actually excited about this birthday!
Just think about it!What’s been going on with Thomas and I since we celebrated his birthday last year?
Starting last August….We Celebrated his 30th birthday with a cook out at the house! (I even made him a peppermint patty birthday cake!)
The house went through a “Nightmare Before Christmas” makeover for Halloween.
The following March, BigBear and I went to Disney World with my brother and his girlfriend.We celebrated birthdays for both our parents and all of our siblings.
We celebrated our cousins and god-daughter’s birthdays.
I made quite a few trips to Wilmington.
Big Bear and I started a Sunday Morning Tradition of golf! (Ok, he golfs, I drive the cart haha)Our baby cousin Paisley was born. <3
I started apartment hunting in Wilmington!
Well I’m sure that more happened but that’s all that’s coming to mind haha.
Instead of cake this year, I made Peanut Butter Fudge Brownies for him this year and I think he liked them better than any cake I’ve made for him haha.
Recently, I received a copy of Shawn Syphus’ cookbook “Express Lane Cooking” in the mail to review!
Shawn is the fabulous blogger behind the blog “I Wash, You Dry“! She just published this amazing cookbook and I loved checking out all of the recipes!
These Peanut Butter Fudge Brownies jumped right out at me. I knew that Big Bear would love these!
With permission, I’m sharing Shawn’s Peanut Butter Fudge Brownie recipe from her new cookbook, “Express Lane Cooking“!Her recipe calls for 1 box of your favorite brownie mix, peanut butter cups, peanut butter chips, sweetened condensed milk and a splash of vanilla!
I actually love boxed brownies haha so I was all for this quick shortcut! Since these are Peanut Butter Fudge Brownies, I picked up a box of the Betty Crocker Supreme Brownie mix that’s got Hershey’s Chocolate and Reese’s Peanut Butter chips in the mix!
Then I headed on over to the baking section and grabbed a bag of peanut butter chips (they’re right beside the chocolate chips) and a can of sweetened condensed milk!
So the only thing I did different from the recipe was I popped these into the fridge to set instead of letting them sit on the counter for 2-3 hours. The directions said “Let the fudge cool for at least 2 to 3 hours before slicing.” and my brain said, “Fudge, Cool in Fridge” so yea. But it’s ok because they were still perfect.The only difference was that my peanut butter cups weren’t melted. So no matter how you let them sit, they’re gonna be tasty!

You guys have had one busy year! So happy your moving to Wilmington. We wanted to relocate there for a while, but it never happened. We stayed here in Florida for the free lottery scholarships, but the public schools are so bad we have to pay for private grade school. There’s no winning, except with these brownies. Happy birthday Big Bear!!!!!!

I grew up with box mix brownies, and love them, so I am all over these! I also happen to love peanut butter fudge and peanut butter cups, so I’m pretty sure they’d be dangerous in my hands.
