Pineapple and BrownSugar Cornish Hens

Pineapple and BrownSugar Cornish Hens

I bought these little hens a week ago and just now decided what to do with them. I was walking around the kitchen grabbing stuff from the pantry and refrigerator trying to figure out what to do with these hens and hubby says “why not use the pineapples and brown sugar in a glaze”. Ding ding ding. Light we on…. why didn’t I think of that. Grrr
haha

So I will have to say this was very good BUT the 1st couple of bites taste a little off…. well they did for me…. but I’m kinda thinking that its because I’ve only had Cornish hens once before and they are pretty “Gamey’ tasting as my husband would say. But after the 1st few bites they were really really good!!

Cooking for 2

What you need:

2 Cornish Game Hens
1/2 Cup Diced pineapples
1/2 cup Brown Sugar
3 tablespoons warm water

What to do

Open and rinse hens. Place into a baking dish. (I placed both of ours in a loaf pan!)
In a large bowl, combine pineapples, brown sugar and water. Mix until well combined. Rub mixture over entire hen. Repeat on second hen. Place hens in pan and pour remaining mixture over hens.

Cook at 375 for 30 minutes. Bump the heat up to 425 and cook for 20 minutes. 😉
