{  Pizza Poppers }

This was one of those “throw together meals with what I have on hand, because I’m tired from a long day at work , BigBear is hungry and I promised him dinner” kind of meals. Yes I am aware that it is a long title… at least I was kind enough to shorten it to ”
Pizza Poppers” for this post. 😉
Some days when I get home from work, I’ve been bitten by the kitchen bug and all I want to do is spend my evening in front of the stove or mixer, creating amazing food and desserts. But then there are days where I don’t even want to look in the general direction of the kitchen. Gasp. I know. It’s painful, but true.
My husband’s love for pizza works to my advantage most of the time. If I’m in the “I don’t want to cook” mode, I can say, “We’re having Pizza for Dinner” and everything is golden in the Barrett household.

But since I didn’t have his favorite Frozen Pizza in the deep freezer, I raided the pantry and fridge for “Pizza Ingredients” and this is what became of it. I just kind of put it together as I went along. I suppose it is what would happen if a Mini Pizza Bite and a Muffin had a love child. It worked, he loved them and that’s all that matters.

Pizza Poppers
by Angie Barrett April-17-2012
**The mushrooms and pepperonis are optional, and can be
replace with your favorite pizza toppings**
Ingredients
  • 6 large refrigerated biscuits ( I use the kind with the bits of butter in the dough)
  • 6 tablespoons pizza or pasta sauce
  • 1/2 cup shredded cheese
  • 1/4 cup chopped mushrooms
  • 18 pepperoni
  • Cooking Spray
Instructions
Pre-heat oven to 350F.
Slice each uncooked biscuit horizontally through the middle. This will give you a top and bottom for each
Pizza Popper.
Spray a muffin tin with the cooking spray.
Place 1 biscuit half into each muffin tin.
Start layering the Pizza Poppers.
To each bottom biscuit dough add, 1 tablespoon of pizza sauce, 3 pepperonis, a few pieces of mushroom, and cheese.

Top with another biscuit half.
After all of the poppers have been filled and topped with a biscuit, bake at 350F for 15 minutes or until the biscuits are golden.

Meet Angie

I love the Farmer’s Market and Farm to Table meals but I’m also not ashamed to use canned vegetables and baking mixes. It’s all about balance! I’m so glad y’all are here!
