We don’t have little ones yet but I’ve noticed that my friend’s posts on social media have all gone from “YAY, it’s the first day of school, my baby is so excited!” to “Oh my word, I hate mornings!”, Or “Everyone is fighting me to wake up and the tears are happening!”
It seems like the joyful first day of school jitters are over and real life has once again kicked my parenting friends in the rear!
Even though we aren’t battling the same morning battles, I totally understand how those kids feel, because while I am 29 years old, I still HATE getting up in the mornings and I would much rather kick and scream my way back under the covers. 😉
We’ve all heard that breakfast is the most important meal of the day right? I know you have! I’ve been hearing it my whole life!
So I’ve got something for you that will not only give your little ones (or you) the jump start to take on the day but it’s also something that won’t tie you down in the mornings! That’s right, this breakfast is going to cook in a slow cooker all night while you’re getting your beauty sleep! (Not that you need beauty sleep or anything) 🙂
Back to School Morning Blues, meet Back to School Pumpkin Pecan Slow Cooker Oatmeal!
Breakfast is going to be packed with Oats, Vanilla Almond Milk, Pumpkin, Pecans and a dash of honey! That’s a pretty awesome list of ingredients!
So let’s slow down just a moment, I want to talk to you about this Pumpkin Pecan Slow Cooker Oatmeal for just a bit!
This oatmeal is made in the slow cooker but here are a few things that I was you to know:
- It takes about 8 hours to cook on low, don’t cook it too long or it may dry out.
- The consistency of slow cooker oatmeal is different than regular oatmeal in my opinion. If you don’t want slow cooker oatmeal, I have a section at the bottom of the post on what to do to make this oatmeal on the stove top, PS If you’re going to make this in the morning on the stove top, put all of the dry ingredients in a labeled mason jar so that everything is measured out already!
- If the oatmeal is too dry for your liking, add a little bit of warm AlmondMilk to the oatmeal and mix it well. I don’t like for my oatmeal to be super thick.
My cousin Crystal was my inspiration for this Pumpkin Pecan Slow Cooker Oatmeal! She used Silk milk to make her daughter’s oatmeal in the mornings and she said that it was much better than water! I’ve only used water to make my oatmeal before and I’ve been missing out! I loved the oatmeal so much better with the Silk milk!
I then decided that since I wanted something that would be quick for busy mornings that I should take this idea of using milk and try it out with my slow cooked oatmeal! I don’t think I’ll ever go back to making it with water again!
Yes, I know this is totally a slow cooker recipe below BUT if you don’t want to make it in the slow cooker, or maybe if you don’t have a slow cooker you can still enjoy Pumpkin Pecan Oatmeal for breakfast!
Just layer your Oatmeal and Spices in a jar (you could make it the night before or make a few on the weekends to use during hectic mornings) and then you would just combine the jar contents, the pumpkin, vanilla and milk into a sauce pan and stir! Then heat it over medium heat and cook for 3-5 minutes or until it’s reaches your desired consistency. Sprinkle with pecans and drizzle honey onto oatmeal.

2 tablespoons cinnamon

1/2 cup pumpkin puree (canned pumpkin)
4 cups Vanilla Silk Almond Milk
