Rainbow Meringues

Rainbow Meringues! St. Patrick’s day is almost here y’all! Time to break out the green t-shirts, “Kiss Me I’m Irish” Hoodies and everything rainbow! haha 😉

Or you can forgo all of the green and Irish things and just make these Rainbow Meringues for the weekend. I’m going with the edible rainbows!

Rainbow Meringues

So these sweet little rainbow cookies are pretty easy to make. Thomas and I whipped up another batch this weekend so we’d have a few to snack on this week and it hardly took any time at all. The longest part of making these Rainbow Meringues is the cook time, mainly because they have to bake low and slow.

These Rainbow Meringue cookies are crisp, airy cookies! Plus they’re super cute when piped out into a rainbow.

These cookies will stay fresh for a few days in an airtight container!
