I was not a fan of Brussels Sprouts when I was growing up. My dad loved them and always tried to get us to eat them with dinner but I just hated them. However, that is not longer the case and I’ll gladly have brussels sprouts with dinner….if they’re cooked right! These Roasted Brussels Sprouts and Bacon are one of my favorite ways to have brussels sprouts and I love how easy they are to make! Just Dice, Toss and Roast!
What you’ll need for Roasted Brussels Sprouts and Bacon: (amounts below in recipe)
- brussels sprouts
- bacon, uncooked
- olive oil
- onion powder
- salt
- pepper
How to pick the best Brussels Sprouts at the grocery store or farmers market:
- Try to look for smaller heads brussels sprouts when picking out brussels sprouts in the store. Bigger isn’t better when it comes to brussels sprouts and the smaller heads of brussels sprouts are going to be the most tender and offer up the most flavor.
- Look for brussels sprouts that are more green than yellow. If the leaves are yellow and wilted, pick a different batch of brussels sprouts.
- Brussels sprouts are at their peak in the winter but we love them all year long.

- If you’re looking for Brussels Sprouts in the store or farmers market you’ll normally find them one of two ways.
- Brussels Sprouts on the stalk
- Brussels Sprouts already removed and sometimes already packaged; sometimes they come in steamer bags
How to prepare Brussels Sprouts for cooking:
- Cut off the rough tough stem part of the brussels sprouts
- Remove any wilted or super loose leaves
- Rinse them under cold water to remove any dust or loose dirt
- For this recipe, cut larger brussels sprouts heads in half
These brussels Sprouts are ready for bacon!
There is no need to cook the bacon before you add it to these brussels sprouts. This dish is going to roast at 400F for 30 minutes so that bacon is going to cook up just fine in the oven.
Time for OLIVE OIL and SEASONINGS
I don’t put of ton of seasonings on brussels sprouts when I roast them.
Just a little bit of onion powder, salt and pepper is really all that these brussels sprouts need.
You can use diced onions instead of onion powder if you want to. We don’t use onions because my husband is allergic to onions, but he can handle onion powder which is why I use it.
If you want to add onions just dice up a small white or yellow onion (maybe half or 1/4 of the onion, not the entire thing) and add it in with the bacon to roast with everything.
HOW LONG DO YOU ROAST brussels sprouts and bacon?
These Roasted Brussels Sprouts and Bacon take about 30ish minutes to roast in a 400F oven.
When making these, start checking them after about 30 minutes. If they’re already fork tender and the leaved are starting to crisp up a bit on the edges, they’re done and ready to go.
If they’re still tough, keeping roasting them. Check them after 5-10 minutes. Don’t panic if the edges and backs char a little bit. Crispy brussels sprouts leaves are delicious.

- Should I pick out little or big brussels sprouts?
Bigger ISN’T better when it comes to brussels sprouts. The bigger the brussels sprouts the more bitter. Big brussels sprouts are gonna taste like cabbage.
- Can I use butter instead of olive oil.
You can try it but the butter will probably burn.
- Does it matter if I use Olive Oil or Extra Virgin Olive Oil?
Nope ???? Either one is fine.
- Can I use other kinds of bacon?
I bet an apple smoked bacon would be great with this!
