It seems like most of the recipes that are being shared around the holidays are super heavy. I’m all for indulging during the holidays but sometimes I need something a little lighter to offset everything. That’s why we’re going with Roasted Cherry Tomatoes today.
Normally I’m only about tomatoes during the summer when I can get them at the farmer’s market. I hardly ever buy regular tomatoes at the grocery store and they never come home with me during the winter. I just think that tomatoes taste better in the summer.
Except for Roasted Cherry Tomatoes!
While I do love cherry tomatoes during the summer, I still love them in the winter.
These Roasted Cherry Tomatoes are super easy to make and I think they’re great as a side dish! Heck, give me a bit of roasted chicken and some roasted cherry tomatoes for lunch or dinner and I’m a happy girl!
Here is what you need to do:
Preheat oven to 400F.
Remove stems from clean tomatoes.
Lay tomatoes on a rimmed baking sheet and toss with olive oil.
Sprinkle with garlic powder, onion powder, and pepper. Toss to coat everything with olive oil and seasonings.
Bake for 45 minutes or until roasted to your liking.
Eat them as is or toss them into pasta dishes, pasta salads, top pizzas with them or I bet these would be awesome in the Easy Cheesy Mac and Cheese!

- 2 lbs cherry tomatoes
- 1/4 cup olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/2 teaspoon black pepper
