We are a potato loving family, we love them no matter how they’re made. To be honest, when Thomas and I first got married potatoes were one of the few foods that Thomas would eat every day and be totally fine with it. haha.
Not only do we love potatoes but we love Sabra too! Now look here, I’m not just saying that either. We work with Sabra a few times a year with here on the blog and each and every time, I tell you about them and their products, I’m speaking the truth when I tell you that we love the products they have.
So let me tell you about this Spinach and Parmesan Tzatziki Dip! It’s one of the newest products I’ve tried from Sabra. Now, I am a big fan of their Roasted Garlic Hummus and their Farmer’s Ranch Greek Yogurt Dip but now I’m adding Sabra’s Spinach and Parmesan Tzatziki Dip to my list of favorites.
Now of course you can use the Spinach and Parmesan Tzatziki Dip as a dip. It’s perfect for dipping all kinds of vegetables and it’s ever super great with pita chips.
However I’m topping these homemade smashed potatoes with it and it’s amazing!
So smashed potatoes… nope… not mashed potatoes. These are indeed smashed potatoes.
They’re boiled and seasoned before they’re roasted a bit in the oven. That makes them soft on the inside like a mashed potato but oh so crispy on the outside!
You can get the entire recipe with directions below but here is a little cliff note version.
After you boil these little potatoes, you’re going to coat them in olive oil and season them up a bit.
Then, you use the palm of your hand or a mason jar to smash the potatoes.
That’s right, you’re gonna smash them a bit.
Then, bake them in the oven for 20 minutes or so and then let them cool just slightly.
Top these lovely smashed potatoes with a little Parmesan cheese.
Then finish them off with a nice scoop of Sabra’s Spinach and Parmesan Tzatziki Dip.
Perfect little bites that go great as an appetizer and they’re great for finger food during a game! Not only that but I think they’re the perfect side dish for steak or chicken.
I mean to be honest you could just eat a bunch of these as your meal! I’d be totally ok with that!
