Strawberry Shortcake Truffles Cut Open

During the summer, whenever we have a cookout or a party, I love to make a big Strawberry ShortCake Trifle or Homemade Strawberry Sauce with fresh strawberries to pour over those little sponge cakes! Those strawberry shortcake desserts are always the first thing to be devoured my guest and anyone that loves strawberries will go crazy over them

So, I thought I’d bring my love of strawberry shortcake over to the world of candy and truffle making!

I’ve seen other Strawberry Shortcake Truffles recipes that use Golden Oreos but I didn’t want to go that route. I wanted these to be more like a regular Strawberry Shortcake with the elements of cake and strawberries instead of crushed cookies / cookie crumbs.

These Strawberry Shortcake Truffles would be perfect as a homemade Valentine’s day gift, adorable on a dessert table for a baby shower, or just as a sweet treat to make at home with the kids!

Ingredients For Strawberry Shortcake Truffles:

  • frozen pound cake loaf, thawed
  • cream cheese, softened
  • Dixie Crystals Confectioners Powdered Sugar
  • strawberry extract
  • freeze-dried strawberries
  • white candy coating, candy melts or white vanilla almond bark / white chocolate chips

Can I Use Frosting Instead Of Cream Cheese For Homemade Truffles?

You sure can. I think that when you makes them with the frosting, they’re more like cake pops, but you sure can. Just add a few spoonfuls and mix the dough together until you get the consistency that you want.

Can I Change Up The Flavor Of These Truffles?

Instead of freeze dried strawberries, you could use freeze dried bananas or freeze dried raspberries to change up the flavors. Just make sure to switch the extract to vanilla extract or match it to the freeze dried fruit flavor.

How To Make Strawberry Shortcake Truffles:

  1. First we’re going to start by crumbling the thawed pound cake in a large bowl.

  2. You want to crumble the pound cake into fine crumbs. Just crumble it so there aren’t huge pieces.

  3. Add cream cheese, powdered sugar, extract and 1/2 cup crushed freeze-dried strawberries.

  4. Now mix that up well until it forms a dough.

  5. Now take about 1 tablespoon worth of dough and roll it into a ball with the palms of your hands.

    Do this with all of the dough and place it on a tray that will fit into your fridge.

  6. Chill them in the refrigerator for at least 30 minutes.

  7. Melt candy coating according to package directions. This is normally 30 second burst in a microwave until melted.

  8. Dip each truffle into candy coating, rolling to coat entire truffle. I like to use a fork to dip and a spoon to help cover the truffle with the melting chocolate / melting candy.

    Tap off excess chocolate / candy coating.

  9. Place on a piece of parchment paper and sprinkle with finely crushed freeze-dried strawberry powder while candy coating is wet. Continue with all truffles.

  10. Let sit about 10 minutes undisturbed while chocolate shell sets.

How Do I Store Strawberry Truffles?

Store them in an airtight container in the fridge or on the counter. They should be good for about a week at room temperature. However, I would recommend keeping them in the fridge if you want to keep them longer.

Can You Freeze Strawberry ShortCake Truffles?

I haven’t frozen these exact cake truffles but I have frozen others in the past. They should freeze nicely in an air tight container or bag for about 2 months. Just take them out and let the thaw before serving.

    Where do I get the Freeze dried strawberrys? in the freezer section a my store?

      Hi Linda! I normally find them on end caps at the grocery store near the fruits or with the snacks like trailmix and peanuts.
