I’m not even going to pretend right now. I’m exhausted, y’all. I could lay down on my computer right now and go to sleep. But I wanted to get this recipe up haha and I wanted tell you how the challenge is going!

Big Bear and I are actually doing very well on it! We’ve been working on meal ideas (Anne is helping with that too),  I’m cranking out some good stuff from the kitchen, we’re snacking on fruits and we’re staying hydrated! Today was the second day of our challenge and for the most part it went the same as yesterday.

Breakfast was the Attune Uncle Sam’s Rye and Hemp Cereal for me (Protein shake for BigBear), We both had last nights leftovers for lunch (that’s the recipe that I’m sharing in this post), I had a banana for a snack and then for dinner tonight we had avocado pasta with Greek seasoned chicken and mushrooms with a homemade “Olive Garden Salad”. I’ll have that post up sometime soon!

But let me get back to this dish, Teriyaki Chicken & Vegetable Kabobs Over Quinoa. I’m kind of wondering if I can say yes everything in this is “Clean Eating” but even though I made the Teriyaki sauce for the chicken and veggies, I did have to use Soy Sauce. Does that count against me? Or can you use soy sauce in clean eating? humm…. I hope so. I only used a little bit though 🙂

I made four servings so that we could have dinner last night and then have enough for lunch today. Quinoa fills me up quick as does chicken so it was quite a filling lunch but it didn’t leave me feeling sluggish or yucky! YAY!

I’m amazed at how full I feel even though I’m not eating a ton of food. I mean well I am eating a good amount of food but not like that “weigh you down” food for each meal.

 

Teriyaki Chicken & Vegetable Kabobs Over Quinoa Recipe

  • Serves: 4

Ingredients

  • 2 boneless, skinless chicken breast, cubed
  • 1 tablespoon coconut oil (or extra virgin olive oil)
  • 1  zucchini, cut into pieces
  • 1 yellow squash, cut into pieces
  • 12 baby portabella mushrooms
  • 12 cherry tomatoes 
  • Sesame Seeds* optional
  • Homemade Teriyaki Sauce (recipe below)
  • 4 cups water
  • 2 cups Quinoa

For the Teriyaki Sauce:

  • ¼ cup  low-sodium soy sauce
  • ¾ cup water
  • 1 teaspoon ground ginger
  • 3 tablespoons honey

Instructions

  • Preheat the oven to 375F.
  • Thread the zucchini pieces, yellow squash pieces, whole baby portablello mushrooms and whole cherry tomatoes onto skewers. Use metals ones or use wooden ones that have soaked in water over night. 
  • Set the skewers onto a baking sheet.
  • In a medium bowl, whisk together the soy sauce, water, ginger and honey to make the Teriyaki Sauce. Brush the vegetables with the Teriyaki sauce. 
  • Place kabobs into the oven. Cook for 20 minutes or until vegetables are done. 
  • Set the rest of the Teriyaki sauce aside. 
  • Combine the Quinoa and water in a pot. Bring to a boil and cover. Reduce and let cook for about 15 minutes or until water is absorbed. Fluff with a fork. 
  • While the Quinoa is cooking, cook the chicken. In a large pan, melt the coconut oil on medium-high heat. Add the chicken and cook until done, the chicken should be white with no pink in the middle. 
  • Add Teriyaki sauce to the chicken. Cover and let cook on low for about 5 minutes
  • To plate: Place a bed of Quinoa on the plate. Brush the kabobs with some of the Teriyaki sauce and carefully remove the vegetables from the skewers. Place them on the plate. Scoop out the chicken with a slotted spoon and add to plate.
