After my sweet friend Toni passed away last year, her sister and I spent a few weekends down at her place in Wilmington helping her daughter with a few things. One of our tasks involved going through some boxes from her closet and storage closets, one of those boxes contained a ton of cookbooks and some hand written recipes from Toni.
I flipped through the pages, reading each recipe and making copies of some of them.
Toni was a great cook and she loved making meals for her family and friends. I was like her “mini me” haha. We even had the same equipment in our kitchens in the same places. haha When we would go down there and I would cook, I knew where everything was because our kitchens were unknowing organized the same way haha.
So a few weeks ago I finally broke out some of Toni’s recipes and decided to share a few with y’all. The one I’m sharing today is Toni’s Slow Cooker Stupid Easy Chicken!
Now this Stupid Easy Chicken used this Lipton Savory Herb and Garlic Soup mix!

When I first tried to make this recipe I couldn’t find the Lipton Savory Herb and Garlic Soup mix and Toni’s sister swore up and down that Toni really meant “onion soup mix”. So I bought onion soup mix and made the recipe. It made the whole apartment smell like onions and I couldn’t imagine Toni letting her kitchen smell like that for a meal. haha.
So I thought I must have done something wrong. Then last week, we were at Walmart and I found “Lipton Savory Herb and Garlic Soup Mix”! Ahh so it WAS Savory Herb and Garlic Soup Mix after all. So I decided to try the recipe again, this time with the Savory Herb and Garlic Soup Mix.
I chopped up the chicken, added it to the crock pot, threw in the tomatoes and sprinkled in the soup mix. I turned it on and let it start to cook. Oooo the apartment smelled wonderful!
Now this is the kind of meal I had in mind when I first read her recipe.
While it cooked, I checked on it a few times and I knew about half way through that Toni’s Slow Cooker Stupid Easy Chicken was going to be a hit at our house.
About 15 minutes before it was done, I went ahead and boiled up some bow tie pasta.
“….cook it all in the slow cooker and then cook up a pot of pasta right before serving….”
When it was done, drained it and tossed it into the chicken and tomatoes. I mixed in a little Parmesan cheese and BAM, dinner was done.

Tried this today and was a little disappointed initially. Guess I should have drained the canned tomatoes…had to pour off a lot of liquid at the end of cooking time. Was hoping the parmesan would thicken the sauce some but it didn’t. After draining, decided to stir in some additional herbs, sliced calamari olives and chopped spinach for more flavor and appealing appearance. Was delicious and looked great! Sure other veggies could be added as well. Thanks for sharing the recipe.

Glad you liked it in the end! I wonder why the liquid didn’t cook out. I normally have the opposite probably and sometimes feel like I need more liquid (or to add more liquid when heating it back up). Love the idea of adding the spinach.
