Have you heard of Gourmet mom on the go??? Talk about a cool site!!! Mandy has an awesome site just for Moms on the Go. Now I’m no mom but I do have god-children and a niece so kid friendly crafts are a must! These are the Wiggly Watermelons !!!!!

Gourmet Mom On-the-Go
Wiggly Watermelon

Ingredients:

(I bought a small personal watermelon at Food Lion so I cut ever thing in Half as far as amounts go)

Watermelon rind
4 large boxes red jell-o (6 oz., I used Strawberry but she used cherry)
5 cups water (Please Please make sure that you DO NOT follow the water instructions on the jell-o box, the jello will not hold its shape)
1/4 c. mini chocolate chips ( I used regular size cause that’s what I had lol)

note: this recipe is for ONE half of a large watermelon or both halves of a personal watermelon. If you want to use both halves of the large one, double the jell-o and water.

Directions:
Cut melon in half and scoop out fruit with a melon baller or spoon. Make sure to get all the way down to the green rind. Stand the melon on its end.

Boil water, add jello, and mix well. Pour into prepared melon rind.

Chill Your “Watermelon”. When jello is firm but not completely set, push mini-chocolate chips into the jell-o with a chopstick. Let set completely in the fridge.

Cut into wedges and Enjoy!!! Perfectly awesome for someone like me who isn’t crazy about the taste of watermelon but love the look hahaha, and its pretty cool to get “ooos and ahhhss” at Cookouts! 🙂

I love the Farmer’s Market and Farm to Table meals but I’m also not ashamed to use canned vegetables and baking mixes. It’s all about balance! I’m so glad y’all are here!
