This week’s Finishing Up Friday Menu Plan is about comfort food that doesn’t take a ton of time to make! Our Meal Plan this week is staring a fantastic air fryer meatloaf that makes minutes to put together, simple roasted potatoes, buttered corn that couldn’t be easier to make. We’re finishing off this fantastic meal with a fresh lemonade fruit salad.
Welcome to a new blog series as well at the very first edition of, Finishing Up Friday Menu Plan. I get it, finding dinner ideas and menu planning is rough sometimes. Plus, by the end of the week and by the end of the day on a Friday, sometimes we just don’t have the energy left to plan out full meal. I completely understand, we’ve all been there. Now that we have a kid, sometimes I feel like I’m even more scattered brained and exhausted by time the time Friday afternoon rolls around between school, work and extra kid activities.
Finishing Up Friday Menu Plan will be sort of like a helping hand and/or inspiration if you need a little extra help planning for dinner towards the end of the week. Some recipes might be easy to make in advance and keep stored for a few days and some recipes will be quick recipes that can be tossed together in the evening. Let’s cook up some tasty food to finish off up the week without adding extra stress!
This Friday’s Menu:
Air Fryer Meatloaf – this is a great recipe to make the day of or the night before. You can put this meatloaf together the night before and place it into an air tight container then pop it into the air fryer. Or you can make it after work and it’ll only take about 10 minutes to prep.
Oven Roasted Potatoes – Since we’re using the air fryer for the Main Course, we can utilize the oven for an easy side dish. Chop, Season and Roast. That is all we have to do for this side!
Milk Butter Corn on the Cob – The Stove top is coming in hot for our other side dish recipe. This is by far the BEST way we’ve ever made corn on the cob. Pop everything into a stockpot and let it go!
Lemonade Fruit Salad – We’re ending the meal with an easy and light dessert. You can make this fruit salad the day before OR make it first thing when you get home from work, pop it into the fridge and dessert will be ready when dinner is over.
