How do you talk about how grateful you are for something without sounding like you’re just bragging to no end? I suppose you could just say, “I am grateful for XYZ” but what if your heart is so full of Thankfulness and blessings that you feel like it could explode at any moment.

That’s how I feel right now as I’m typing this blog post. Don’t get my wrong, my life isn’t perfect. I have troubles and problems just like the next person. Sometimes things don’t go my way and sometimes I feel like I wish and pray and work towards goals for YEARS before I see a glimmer of them. However right now, as I sit here in my living room with my cuddly baby boy dreaming beside me and my Christmas tree lit up in the corner of the room, everything seems right in the world and my heart feels like it could just burst.

Everything just means so much more to me now that I’m a mom. Like EVERYTHING haha. Even small stuff like these cookies. Yep, even cookies.

When we were in the mountains a few weekend ago, we stopped at one of our favorite little stores and I bought a few jars of homemade apple butter. So while I was in the kitchen doing a little holiday baking, I started working on these apple butter cookies and memories from our little mountain trip were dancing around in my head.

………who knew the small things would mean so much to me now…..

Then as I worked on the recipe, it took a snickderdoole themed turn and Thomas LOVES snickerdoodles, so that made me smile.

Well by time I go done baking these Apple Butter Cookies, I was smiling from ear to ear thinking about how much Thomas was going to love these apple butter cookies that I had made with apple butter from our trip. Like I said, even the smallest things mean the world to me right now.

Is that a new mom thing? I kinda love it!

These Apple Butter Cookies are a mash up of snickerdoodles and sugar cookies! They're soft and chewy with a cinnamon sugar crust! Make them with store bought apple butter or homemade apple butter!

………swapped out some of the butter for apple butter and added a few dashes of cinnamon…..

These apple butter cookies are made similar to snickerdoodles but they do crackle and spread out a little but thanks to the apple butter. I used one of my favorite snickerdoodle cookie recipes, swapped out some of the butter for apple butter and added a few dashes of cinnamon. I also rolled the cookie dough in cinnamon sugar before baking them to give them an extra sweet crunch.

They’re soft and chewy on the inside with a cinnamon sugar crust! What more could you ask for in a cookie?

    Which grocery stores carry Dixie Crystals? I live in Indiana and haven’t been able to find it. Also, what is a good substitute for Dixie Crystals?

      Hi Rena! Dixie Crystals is a brand of white granulated sugar 🙂 If you can’t find their brand or Imperial Sugar, you can use your favorite white sugar for this recipe.

    Really great cookie! I subbed pumpkin butter for apple butter for an even more seasonal treat. This recipe’s a keeper. Always use Dixie Crystals when I can find it!

    I made the apple butter cookie recipe twice. The flavor is nice, but something is off because 1) my cookies do not look like the cookies in the photo; they flatten a bit, but maintain a rounded, half-ball shape, and 2) the dough is so sticky that it is very difficult to work. I would like to know what isn’t right with ?????

    Not impressed…. They look nothing like the photo. Flavor is ok but they come out like flat biscuits. Will not make again

    Ok just made second batch and double coated them with sugar. They turned out way better… just fyi.
