Eclair is by far one of the easiest desserts and I love the fact that it can be changed up so much as far as flavors and decorated for different occasions! Other than my Hot Chocolate Cookies that are requested like crazy around the holidays, Eclair dessert is by far the most requested dessert when we have parties and family gatherings!

I’ve made all types of eclairs before! I love the original eclair, I’ve made a USA Eclair Dessert for the 4th of July, a Halloween Pumpkin Patch Graveyard Eclair happened for #HalloweenTreatsWeek last year and I made a regular pumpkin patch eclair (without the bones and Zombie hands haha) for my sons 1st birthday!

This eclair dessert took a new spin for the summer! I’d like to present the Banana Split Eclair Dessert with Banana Whipped Cream for this year’s #SummerDessertWeek event!

Banana Split Eclair Dessert with Banana Whipped Cream

What you’ll need to make this Banana Split Eclair Dessert:
  • Vanilla Instant pudding (or banana)
  • milk
  • graham crackers
  • rozen whipped topping (coolwhip)
  • crushed pineapples, drained
  • strawberries
  • bananas
  • chocolate icing
For the Banana Whipped Cream:
  • heavy cream
  • powdered sugar
  • banana extract

Pudding and Cool Whip Mixed

To make this Banana Split Eclair Dessert with Banana Whipped Cream:

In a large bowl, mix together the Vanilla Instant pudding mix and cold milk.

Whisk until the pudding starts to thicken!

Fold in the thawed whipped topping.

Layering a Banana Split Eclair Dessert with Banana Whipped Cream

In a 9 X 13 dish, spoon out 2-3 spoon fulls of pudding mixture into the bottom of the dish.

Lay out a row of graham crackers.

Slice 1 banana and add slices on top of graham crackers.

Slice 4 strawberries and add them to the banana layer and sprinkle on 1/4 cup drained crushed pineapple.

Cover the graham crackers and fruit with half of the pudding.

Lay down another layer of graham crackers.

Slice 1 banana and add slices on top of graham crackers. Slice 4 strawberries and add them to the banana layer and sprinkle on 1/4 cup drained crushed pineapple.

Cover with pudding. Finish with a graham cracker layer.

Chocolate layer on a Banana Split Eclair Dessert with Banana Whipped Cream

Heat the chocolate frosting so that it easy to pour but not completely liquid. (I normally stick my cans of frosting into the microwave for about 20 seconds.)

Spread the chocolate frosting over the top layer of graham crackers.

Refrigerate for 6-8 hours (or overnight) *Long enough for the graham crackers to become soft*

 Banana Whipped Cream

When ready to decorate, add heavy whipping cream, powered sugar and banana extract to a bowl of a stand mixer or use an electric mixer.

Whip on medium – medium high speed until stiff peaks form.

Fill a pipping bag with the banana whipped cream. Wilton sent us these Disposable Decorating Bags with 1M Tips and I love them!!

Pipe 16 swirls on top of the eclair. 4 across etc.

Top swirls with banana slices, strawberry slices, drained crushed pineapple and cherries. I’d probably wait and do this step right before serving. You can make the banana whipped cream the night before and keep it in the fridge.

Or if you want to decorate before hand I would just leave the bananas off the top. You don’t want them to turn brown.

Also, beware…. if you make this Banana Split Eclair Dessert with Banana Whipped Cream, cute chubby baby hands might just appear to try to sneak off with the bananas! haha

Banana Split Eclair Dessert with Banana Whipped Cream Recipe

Banana Split Eclair Dessert with Banana Whipped Cream Love Eclair desserts and Banana Splits? This fun summer recipe combines them both into a Banana Split Eclair Dessert with Banana Whipped Cream! 

  • Yield: 12-16 servings

Ingredients

  • 1 Large box (5.1oz) of Vanilla Instant pudding (or banana)
  • 3 cups of milk
  • 1 box of graham crackers
  • 8 ounces frozen whipped topping (coolwhip)
  • 1/2 cup crushed pineapples, drained
  • 10 strawberries
  • 2 bananas
  • 2 cans of chocolate icing

For top of Eclair:

  • 4 strawberry slices
  • 4 banana slices
  • 4 maraschino cherries
  • 4 tablespoons of crushed pineapples, drained
  • Banana Whipped Cream (Recipe below)

Banana Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon banana extract

Instructions
