Blueberry White Chocolate Pancake Bites

My brother and his girlfriend gave my husband and I the most awesome gift basket for Christmas from Dan Valley. It was full of food hahaha.

Pancakes Mixes
A jar of Honey with the real Honey Comb
like 5 different Jams
Chocolate chips, White Chocolate, Butterscotch chips
Moonshine jelly
2 different Syrups
Cake Mix
Cake Icings
and More Stuff than I can list.

Lets just say it is/was amazing!

So being the cook and baker I am, I vowed to make something with every ingredient in the basket BUT I wanted to make something different….. something that this ingredient wouldn’t normally make!

So today I stood staring at my basket with a Bag of the Blueberry Pancake Mix in my hand, I thought and thought and tried to decide on what to do with it!

I couldn’t just make Blueberry Pancakes! I had to make something special!

So…Blueberry White Chocolate Pancake Bites

What you’ll need:

2 cups blueberry pancake mix
1 cup water
1/2 cup powdered sugar
1/3 cup white chocolate chips
4 cups vegetable oil (Or how ever much it takes to make about 4-5 inches of oil in your pan)

What to do:

In a medium sized pot, add 4 cups of oil, and heat oil to 350 degrees.

In a medium sized bowl combine pancake mix, water, and white chocolate chips and mix until blended.

Use a cookie scoop to scoop out pancake batter and drop into hot oil. I used the Pampered Chef Medium Scoop

I only did 4 at a time!

Once the bottoms of the bites are brown, use a slotted spoon and flip them over until the other side is brown. They took less than one minute to do each one.

One at a time remove browned bites and drop them into the powdered sugar. Roll the bites in powdered sugar and place on a plate.
