This Buttermilk Oven Fried Chicken is a perfectly cooked chicken breast that’s seasoned and cooked to mimic fried chicken! However, this chicken isn’t fried, it’s baked in the oven!

Do you know what I love most about winter? My home.

I know. That’s kind of out there right? Well not really. Home is where our cozy fire place is. Home is where the Christmas tree is brightly shining and where our puppies are sleeping in their beds.  It’s where my husband and I come together after work to cook together and laugh; the smells of baked cookies and dinner in the oven filling the apartment.

Home is where we can detach from everything that’s going on around us and just gather around the people and moments that make our world go ’round.

It’s where our hearts fill full.

Buttermilk Oven Fried Chicken

One of my favorite moments of the day is the moment right before dinner is ready. This is when we’re starting to connect again and asking each other about our days, the pups are getting their evening treats and the smell of dinner is floating through the entire apartment.

I almost always opt to make dinner in the oven during the winter. It’s like having my very own personal comfort food air freshener blowing delicious smells from the kitchen. There is just something so warm and uplifting about the smell of a home cooked dinner dancing through the air.

Since I love to cook in the oven during the winter months I decided to reimagine one of our favorite southern dishes, homemade fried chicken.  

Normally fried chicken is fried in the skillet or deep fried. However this dish is baked in the oven and only mimics the fried chicken meal that we love.

This chicken does need to marinate in the buttermilk for a few hours but after that, it only takes about 3o minutes to bake!

You see these cornflakes right here? Those little beauties are going to give us the “fried” chicken appeal. You’re going to coat each chicken breast in the cornflakes after they marinate in the buttermilk and seasonings.

After that, it’s a quick trip to the oven and dinner is done.

Mix up the buttermilk and seasoning in the morning, place the chicken in and let it marinate while you’re at work or while you’re at home with the kids during the day.

When dinner time rolls around all you need to do is dip that buttermilk marinated chicken in the crushed cornflakes and the oven will do the rest.

This is one easy meal that will have everyone gathering around the table for dinner.

Serve it alongside a perfectly loaded baked potato, steamed broccoli and a glass of Lipton iced tea for the perfect twist on a southern classic.  

You didn’t think we would enjoy “fried” chicken without the perfect glass of Lipton Sweet Tea flavored iced tea now did you?

Around here we always serve fried chicken and Sweet Tea together, even if it is oven “fried” chicken.

Almost every sit down dinner memory that I have involves family, friends, amazing meals and sweet tea. We all know that dinner down here in the south isn’t really dinner without glasses of Iced tea and lemon slices on the table!

Buttermilk Oven Fried Chicken

Buttermilk Oven Fried Chicken A perfectly cooked chicken breast that's seasoned and cooked to mimic fried chicken! However, this Buttermilk Oven Fried Chicken is baked in the oven!

  • Prep Time: 10m
  • Cook Time: 30m
  • Total Time: 5h
  • Yield: 4 chicken breasts

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon pepper
  • 1/2 teaspoon seasoning salt
  • 4 cups cornflakes cereal

Instructions

  • Place chicken breasts between 2 pieces of parchment paper (or plastic wrap).
  • Smack chicken breasts with a rolling pin or large wooden spoon until chicken breasts are flattened to about 1/2 inch thick.
  • Season the chicken breasts (on both sides) with the garlic powder, onion powder, smoked paprika and pepper.
  • Lay chicken breasts in a dish and cover with the buttermilk.
  • Cover with foil and place into the fridge for 4 hours - overnight.
  • When the chicken is ready, preheat the oven to 400F.
  • Crush the cornflake cereal until it resembles breadcrumbs.
  • Remove the chicken from the fridge.
  • Pour the crushed cornflake cereal into a shallow dish.
  • Pick up each chicken breast and let the buttermilk drip off.
  • Lay chicken breast into cornflakes and coat each side.
  • Lay the chicken breasts on a baking sheet. (I lay mine on a wire rack on top of the baking sheet.)
  • Bake for 25-30 minutes or until done.

    Looks awesome going to put in the line up for dinner over the next few weeks. also have to make Cole slaw, potato salad and mac and cheese for the boys. Of course banana pudding for dessert and wishing it was a lot warmer..

    I’m making this for dinner tonight. I am using bone in legs and boneless thighs; should I add more time in the oven because of the bone in legs?

      Hi Diane,
      Yes, with bone in chicken you would need to cook it longer than the recipe says here. I haven’t done it this way for this recipe but if I were going to try it with bone in chicken, I would probably lower the temperature to 375 and cook for 45-60 minutes. You just want to make sure you cook it until the meat is white and the juices are clear.

    I made this exactly as described in the recipe. I really wanted to like it, but I found it to be extremely bland. The coating did have a nice crispy texture. I did not care for the flavor of the cornflake crumbs though; they are slightly sweet. Thank you for sharing though:)

      Hi Meg! So sorry that you didn’t like the flavor. If you give it another try, try adding more of the seasonings or maybe even a new variety of spices to amp up the flavor of the chicken. <3 I would love to hear about any flavor combinations you try!
