I wasn’t quite sure when I should post these little cookies. I made them in order to get all of our Easter Candy out of the house because I didn’t want it just hanging about (because you know…I’ll eat it all) haha and I had been meaning to make more treats for BigBear to take to work. These Candy Explosion Cookies were my solutions for both issues, these just seemed perfect!
Even though I used these cookies to get rid of all of our Easter candy, you could use this recipe to use up any holiday candy. We ALL know that for some reason, Holidays = Candy…lots of Candy. Even if we don’t buy any candy we always end up with a tons of it at the house!
Yeck, no holidays coming up? Just use your favorite, everyday candy!

Heck Yes, they were good.
I tried one (ok maybe I had two), BigBear had a few, my mom stopped by for a sample and then I packed up the rest and sent them on to work with my hubby.
By 4pm, he was sending me a text with a photo of the empty cookie container, requesting more. haha.
They’re soft and literally packed full of candy! I used a mixture of Reese Peanut Butter Cups, Chocolate Easter Bunnies, Mini Cadbury Eggs, Hershey Kisses, Kit-Kats and Heath Bars for these!
However you can literally use ANY type of chocolate candy that you want!
What kind of candy would you stuff into these Candy Explosion Cookies?

Makes about 56 Cookies
1/2 cup sugar
1 3/4 cup brown sugar
3 eggs
3 teaspoons vanilla extract
3 cup all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups chopped chocolate candy (any type of chocolate candy)**
**I used Reese Peanut Butter Cups, Chocolate Easter Bunnies, Mini Cadbury Eggs, Hershey Kisses, Kit-Kats and Heath Bars
Pre-heat oven to 350F.
In a mixer, cream the solid brown butter and both sugars together. Mix well.
Add the eggs one at a time. Make sure each egg is incorporated before adding the next.
Add the vanilla and mix until everything is mixed well.
In a large bowl, whisk together the flour, baking soda, and salt.
With the machine on low, slowly add the flour mixture to the batter. Mix until just combined.
Mix in the chopped chocolate candy.
Drop by rounded tablespoons onto a baking sheet. (I love this cookie scoop)
Bake at 350 F for about 8 minutes. Remove and let cool.
