A Caprese Chicken Sheet Pan Meal that’s piled with chicken, mozzarella, fresh basil and tomatoes on a layer of southern collard greens!
Sometimes I get so excited about recipes that I just want to share them all at once, back to back. That’s how I’ve been with these last few recipes.
The recipes that I worked on last weekend and the weekend before were so good that I just HAD to share them right away. However, I’m trying to space myself. I’m really trying not to post a new recipe every day haha.
I know that by just looking at the photos it doesn’t look like much but stick with me here.
You know I’ve been working on the whole low carb thing right? I’m missing my pasta, bread and cookies something fierce. Those people that are like “Yeah, I totally started low carb and like in 2 days I wasn’t even craving pasta heehee” are either #1 liars or #2 aliens.
I’m not sure which. (That’s totally a joke, y’all don’t get your undies in a bunch)
So how is a self-proclaimed carb and pasta lover surviving on a low carb diet? With A LOT of will power. 😉
Well, will power and meal planning.
I told Thomas the other day that if I didn’t work on meal prep and portioning out my meals for the week that I’d never make it. I would fail horribly at low carb eating if I didn’t prep things for the week.
Thomas bought me some little plastic containers that are just the right size for my meals and I’ve been packing them for the week with low carb meals.
Then after I pack up my low carb meals, I write the name and quantity on a little dry erase board that’s on my fridge.
That way when I’m ready to eat, I can look at my list and choose my meal from my menu. It helps so much because I don’t have to stand around in the kitchen while my tummy is growling trying to figure out what I’m going to make.
Also, as much as Thomas loves carbs he’s been really helpful and supportive of my low carb eating and low carb meals. Sometimes he does get to-go food to bring home for dinner for himself but for the most part, he’s been enjoying the low carb meals in the fridge.
So this Caprese Chicken Sheet Pan Meal is totally inspired by the Easy Low Carb Caprese Chicken from Carolyn’s blog, AllDayIDreamAboutFood.com.
When I first started my low carb stuff I as looking for low carb recipe on some of my favorite food blogs. I found the Easy Low Carb Caprese Chicken and fell in love with it.
It was the meal that started this low carb journey of mine.
I decided to take that Carolyn’s blog Caprese Chicken and use it as my inspiration for this sheet pan meal. Y’all collard greens are so good and they’re relatively cheap too.
I used those for my base and piled on a few other key Caprese ingredients!
It’s easy, it’s quick and it’s pretty good for you!

you have had so many delicious recipes lately! I could never ever do a low carb diet because I couldn’t give up my pasta and bread but this dish may make it so I don’t miss them quite as much. Yum!

It might. Spinach is going to wilt a lot faster but it’ll probably still be super tasty!
