First let me start off with, Thank y’all for your grill recommendation over on my Grilled Corn with Herb Butter post! We still haven’t decided on one yet but I’m loving the suggestions!

We may just have to get one of those big grills that does both!

So, today’s blog post is going to be all about these Cheese Stuffed Bacon Burgers! Our #12blogger group had a theme of burgers this month and as soon as I heard about the theme I knew that I wanted to put Thomas’ Cheese Stuffed Bacon Burgers on here!!

I’m not sure if I remember exactly when Thomas started making Cheese Stuffed Burgers but I’m so glad he did. Not only are these stuffed with cheese, topped with cheese and covered in bacon but they’re also made with this new seasoning called Pike’s Peak Butcher’s Rub. My friend, Crystal, introduced me to this spice mixture when we were in Greensboro the other week and we’ve been loving it! I mean I loved the cheese stuffed burgers before but now with this seasoning.. oh my gosh!

It totally adds a great flavor to these burgers!

Is there really anything better than hanging out in the yard and grilling some fantastic cheeseburgers on the grill?? Ok… hanging out at the beach grilling some fantastic cheeseburgers on the grill would be even better but I’m going with what I’ve got here y’all! haha

*Sigh* the beach…I can’t wait! I’m leaving tonight, with Nikki, to head down to Wilmington/Carolina Beach. Hurry Up Friday…Hurry up and be over all ready haha.

Ps. guys, I’m looking for some neat Antique Shops in Wilmington! If y’all have any suggestions for me, please let me know!

But onto the burgers!!

For these, Thomas uses a ground beef that’s 85% lean 15% fat. We also buy the cheese in block form and cut it into cubes but you could also buy the pre-cut cubes of cheese.

You’ll need a little of this Pike’s Peak Butcher’s Rub (or your favorite steak seasoning), 6 Hamburger Buns,  6 Slices of cheese (use the good stuff y’all, it’s worth it), 12 pieces of bacon that you’ve already cooked and you can also add some mushrooms if you like them. (I LOVE THEM)

To make them, you’re going to want to combine the beef and Pike’s Peak Butcher’s Rub (or your favorite steak seasoning) in a large bowl. Mix it together really well!

Press the burger beef into six (5 oz) hamburger patties.
Use your thumb to make indention in the burger and add a cube of cheese. Roll be beef around the cheese (enclosing it into the center) and press the burger into a patty shape again.
Let the burgers rest while you’re getting the grill ready.

Heat a grill and let the flame die out leaving behind white coals. Place the burgers onto the grill and cook, covered for about 20-25 minutes.

Top with cheese and cover. Let the cheese melt for just a few minutes.
Place burger onto bun, add bacon and mushrooms.

You can really put any toppings you like on these. We just added bacon and mushrooms because we love how well they go with the Cheese Stuffed Burgers!

Cheese Stuffed Bacon Burgers Cheese Stuffed Bacon Burgers! YES! These burgers are not only topped with cheese and bacon but there burgers are stuffed with cheese before being grilled!

  • Prep Time: 3m
  • Yield: 6 Cheese Stuffed Bacon Burgers

Ingredients

  • 6 ounces block of cheddar cheese, cut into 1 oz cubes
  • 2 tablespoons Pike\'s Peak Butcher's Rub (or your favorite steak seasoning)
  • 6 Hamburger Buns
  • 6 Slices of cheese
  • 12 pieces of bacon, cooked
  • mushrooms*optional*

Instructions

  • In a medium bowl, combine the beef and Pike's Peak Butcher\'s Rub (or your favorite steak seasoning). Mix it together really well!

    I probably should have checked this out after eating because it’s making me hungry! Grilled burgers are the absolute best, and I can’t wait to try this recipe. The bacon, for me, has to be the best part. Bacon just makes everything taste better. I’m hoping to break out my grill for Father’s Day weekend and get some burgers (and maybe some ribs) going. This may just be the perfect burger to try out for next weekend! Thanks for sharing it, Angie.
