Another dish that I’ve been meaning to make for a long time now is Spinach and Artichoke Dip. I almost always order it when we go out. Ok, well not almost always because most of the places around here don’t have Spinach and Artichoke Dip. But when we go somewhere like TGI Fridays or somewhere out of town, I order it 🙂

It’s just one of those dishes that I order and think “this is something I could make at home” and then never make it. haha yay, go me. I’m so forgetful… or lazy… one of the two 😉

But since this weeks #SundaySupper theme is “Cheese, Cake and Cheesecake”, I thought that this Cheesy Spinach and Artichoke Dip with Parmesan Crisps would be perfect!  P.S I’m hosting this week’s #SundaySupper! YAY!! There are some great recipes today {links below}

My BFF, Crystal, came over today and we worked on a few recipes and this was one of them. I must say that I am pretty happy with the way this Cheesy Spinach and Artichoke Dip turned out. It’s creamy and full of Spinach and Artichoke, just the way I like it.

Oh and the Parmesan Crisps are just perfect with it. I also bought a bag of crisp bagel chips to go along with the dip but the Parmesan Crisps were a nice snack with it.

The Crips are literally 1 table spoon of Parmesan cheese each!

For this dip You’ll need:

20 oz frozen spinach, thawed and drained
2 cans artichoke hearts, drained and chopped
8 oz sour cream
8 oz cream cheese, room temperature
1/2 cup grated Parmesan cheese, extra for the top
1 cup shredded Mozzarella cheese, extra for the top

Cheesy Spinach and Artichoke Dip with Parmesan Crisps

  • Yield: 6-8 Servings

Ingredients

For Dip

  • 20 ounces frozen spinach, thawed and drained
  • 2 cans artichoke hearts, drained and chopped
  • 8 ounces sour cream
  • 8 ounces cream cheese, room temperature
  • 1/2 cup grated Parmesan cheese, extra for the top
  • 1 cup shredded Mozzarella cheese, extra for the top
  • 2 gloves garlic, minced**bagel chips optional for dipping**

For Parmesan Crisps

  • 6 tablespoons grated Parmesan cheese
  • (1 tablespoons of grated Parmesan cheese equals 1 Parmesan chip)

Instructions

For Dip

  • Pre-heat oven to 375F.
  • Mix the sour cream, cream cheese, mozzarella and Parmesan cheese. Add artichoke hearts and spinach. Mix well to combine.Pour mixture into oven safe dishes. Sprinkle a little mozzarella and Parmesan cheese onto the tops.
  • Bake for 15-20 minutes. Or until cheesy is bubbly.

For Parmesan Crisps

  • Pre-heat oven to 400F.
  • Place 1 tablespoon of grated Parmesan cheese into mound on a cookie sheet. Press down gently to make circle. Repeat with each tablespoon of cheese.
  • Bake for 4-5 minutes or until edges start to brown. Remove from oven and let cool.
  • Makes 6-8 Servings
