Mini Kiss Cupcake Cookies

Mini Kiss Cupcake Cookies are perfect little bite size treats with a sweet chocolate center.

I’m probably a bit Irish. Ok, well … I take that back…I am a bit Irish, there is no denying it. But, I’m probably one of the few people that has Irish blood in their family line that doesn’t go all crazy for St. Patrick’s Day. I mean I do wear my green and I do make green goodies for the blog haha, but I don’t go out and drink green beer, party it up or run around pinching people without green on. It’s just not that kind of holiday 🙂

But since my redish hair (well it use to be orange now it’s kinda brown) and freckles remind me daily that my family once traveled the Atlantic to get here (about 100 years or so ago), I thought I’d bring a little bit of the green St. Patrick’s Day celebration to the blog (ok well maybe more than a little bit because I have another St. Patrick’s Day post for you on Monday haha)

These Mini “St. Patrick’s Day” Kiss Cookie came about because I received a prize pack from Hershey and wanted to play around in the kitchen the other day when I actually had some free time. *gasp, I know free time.. what is that?!?* lol

I’ve made mini cupcakes and I’ve made Kiss cookies before but I thought I’d play around and combine the two.The results of my kitchen time? Mini Kiss cookies that are baked in a mini muffin pan, which also means they are the perfectly bite sized. I’m already thinking about making these for the next party that I help put together. (I mean really, you could do any sprinkle so it could go with any theme)

For these cookies, I used the Betty Crocker Sugar Cookie mix that came in my prize box but you could certainly use whatever sugar cookie dough that you wanted.

For the Mini Kiss Cupcake Cookies, mix the sugar cookie dough mix with 1 egg and 1 stick of softened butter. Mix well until combined. Line a mini cupcake tin with mini cupcake liners.

1 to 2 teaspoons if dough for each cookie, roll the dough into a ball and place 1 ball of dough into each liner. If you want sprinkles to be in the dough, roll each cookie dough ball in sprinkles before placing into liners.

Bake at 375F for 8-10 minutes. Just until the edges brown a little. Remove from oven and press 1 Hershey Kiss into the middle of the cupcake cookie.

Sprinkle any additional sprinkles onto melting chocolate. Let cool.

Mini Kiss Cupcake Cookies

  • Yield: 25-30 cookies (depending on how big you make them)

Ingredients

  • 1 package of Betty Crocker Sugar cookie dough mix (or your favorite recipe)
  • 1 egg
  • 1 stick of softened butter
  • 25 -30 Hershey kisses, unwrapped (You\'ll need 1 for each cookie)
  • Sprinkles (optional)

Instructions

  • Preheat the oven to 375F.
  • In a large bowl, mix the sugar cookie dough mix with 1 egg and 1 stick of softened butter. Mix well until combined.
  • Line a mini cupcake tin with mini cupcake liners.
  • Use 1 to 2 teaspoons if dough for each cookie. Roll the dough into a ball and place 1 ball of dough into each liner. If you want sprinkles to be in the dough, roll each cookie dough ball in sprinkles before placing into liners.

    I’m a part Irish gal who doesn’t go crazy for St. Patrick’s Day either-but I could def. get on board with these cupcakes/cookies!

    I’m half Irish and the most I usually do is dye the kids’ milk green. These little cookies are adorable…I bet the family would love them 🙂
