I’m crazy about Chocolate covered rice krispie treats. I love to make them, I love to eat them and I love to share them with friends and family.

Not only are they super tasty but you can pretty much make them to go with any holiday or theme. I love desserts that work like that.

Does everyone got their Easter menus ready?

Hold up, do you know that some of my family wants to go out to eat this year instead of cooking Easter dinner.

Shut the Front Door.

I almost choked on my lunch today when mom said something about it.  That should totally be against the law right? 😉

ok maybe that’s a bit extreme but I’m going to pretend it’s against the law because I REALLY don’t want to have to make reservation, stand it crowds and be stuffed into a super busy restaurant. Please don’t make me. 🙁

Not to mention, I had Easter menu plans! What am I suppose to tell these cute little Chocolate Covered Rice Krispie Bunnies? Am I suppose to tell them that they’re not invited to the Easter celebrations this year because we opted for a waitress and dinner reservation instead? I think not.

Now I’m not saying that Easter is ALL ABOUT the bunnies and the meal but it’s a nice part if it 😉

These little Chocolate Covered Rice Krispie Bunnies are simply homemade Rice Krispie treats that I cut out into bunny shapes with a bunny cookie cutter and dunked into milk chocolate!

After the milk chocolate hardened on these sweet little Rice Krispie bunnies I added a little “cotton tail” and jazzed it up with sparkling sugar!

I love Rice Krispie treats and I’ve been making a lot of them lately.  I remember making them when I was little and I think that since I’m turning 30 this year, I’m just reflecting a lot on what made me happy when I was younger and reaching back and trying to bring those moments into the present!

I may be an adult now and I may have to work and pay bills and eat healthy and watch my calories but I decided that this year I was bring more “happy moments” into my life and well, Rice Krispie treats make my smile so I have a feeling they’ll be making even more appearances this year. 🙂 You’re ok with that right?

Sorry about that, I got off track. So are you ready for Easter? Do you have your new Sunday dress (or suit) picked out? Easter Menu ready? Easter Baskets Made (or bought)?

Chocolate Covered Rice Krispie Bunnies

  • Yield: 8-10 Chocolate Covered Rice Krispie Bunnies  

Ingredients

  • 3 tablespoons butter
  • 10 ounces marshmallows
  • 6 cups rice krispie cereal
  • 2 bags Milk Chocolate Melted Chocolate/Candy Coating
  • 1 bag White Melting Chocolate/Candy Coating Wafers
  • White/Clear Sparkling sugar (or White Sprinkles)
  • Bunny Cookie Cutter

Instructions

  • Melt the butter in a large pot and add the marshmallows. Stir until they are all melted.
  • Add rice krispie cereal a little bit at a time and stir to combine.
  • Press rice krispie cereal into a buttered cookie sheet. Press flat and let cool.
  • Let rice krispie treats sit for about 15 or 30 minutes.
  • Remove from pan and cut into bunny shapes.
  • (I find it best to place the bunnies into the fridge so that they\'re hard before dipping but you don\'t have to do that)
  • Melt Milk Chocolate according the package directions.
  • Dip the the Rice Krispie Treat into the melted  milk  chocolate.
  • Lay on a sheet of wax paper or parchment paper (or a plate) to harden.
  • Lay out 10 white chocolate candy wafers from the package and then melt half of the white chocolate according to the package directions.
  • Take a little of the melted white chocolate and \"glue\" each white chocolate wafer to the back/bottom of the chocolate bunny for the tail. Take some of the melted white chocolate and cover the white bunny tail with white melted chocolate.
  • While the white chocolate tail is still wet, sprinkle with the White/Clear Sanding Sugar (or White Sprinkles)!
  • Let the rice krispie treats sit for about 20 minutes undisturbed or until the chocolate has hardened.
  • *For Bunnies on a stick, insert a popsicle stick into the bottoms of the Rice Krispie Bunnies  before dipping into the chocolate*

    Oh my goodness!! These bunnies are so adorable! The sparkly tails are what sold me. I think I might add these to the Easter Menu. And yeah. Eating out on Easter should totally be illegal.

    How cute are these little bunnies with their sparkly tails!?! And I totally agree about Easter dinner – I don’t want to spend it in a noisy, crowded restaurant. I’d much rather enjoy that time at home!

    I love these bunnies! They are so cute! And we always do Easter diner at home too, so much more relaxing. Oh, and I’m so sorry you’ve been having problems finding a dress for that ball. If my granny was still alive, she’d have you one made in a couple of days. I wish I could sew like her, I inherited the sewing machine, but not the talent!

    Welcome to my world. It takes me two days as well to recover from a night of out (and I don’t even drink that much!! I’m a total lightweight. Two cocktails and I’m done!) so I hear ya!! I hope you had fun, though 🙂 Now, these bunnies are ADORABLE!! You make the cutest stuff!! Super creative.
