While cookies are wonderful all year long, there is something super special about making batches of Christmas cookies during the holidays! We love to make cookies for friend, neighbors and family during the holidays and these Chocolate Dipped Meringue Sandwich Cookies are perfect for gift giving!
What you need for Chocolate Dipped Meringue Sandwich Cookies: (amounts in recipe)
- Dixie Crystals Extra Fine Granulated Sugar
- egg whites, room temperature
- cream of tartar
- vanilla extract
- chocolate chips
- heavy cream
- crushed candy canes
How to make Chocolate Dipped Meringue Sandwich Cookies:
I have the entire recipe for y’all on the Dixie Crystals site with all of the measurements and directions but here are a few step by step photos to help you out.
Start by combining the sugar, egg whites, vanilla extract and cream of tartar in a metal mixing bowl. Whip on high with an electric mixer for about a minute until foamy. Then we’re going to need to move on over to the stove for the next part.
Fill a medium saucepan with about 2 inches of water and bring to a simmer over medium heat. Place the mixing bowl on top of saucepan. Using a hand whisk, gently whisk mixture for about 7-10 minutes for sugar to dissolve. Don’t panic! This is actually really easy.
Once the sugar is dissolved, return the mixing bowl to the standing mixer. Whisk on high speed until stiff peaks form.
Next, it’s time to pipe the meringues onto a prepared baking sheet. Line a baking sheet with parchment paper or a silicon mat.
Fill a piping bag with mixture and pipe 35 cookies onto a prepared baking tray. If you don’t have a piping bag or don’t want to use one, you can also just use a spoon to dollop the mixture onto the baking sheet.
Make sure that the cookies are made in flatish circles. These Cookies will NOT spread, so pipe them to the size you want the cookie to be.
Whatever they look like going into the oven is exactly what they’ll look like coming out of the oven.
Preheat oven to 175F. Place cookies into a preheated oven and bake for 1 hour.
Once baked, turn the oven off and let the cookies cool in the oven for about 30 minutes.
While the cookies are cooling, make the crushed candy cane topping.
Place unwrapped candy canes into a sealable plastic bag.
Take out holiday and life frustrations on the candy canes with a rolling pin! haha

Then make the ganache.
Ganache for these sandwich cookies is made with semi sweet chocolate chips and heavy cream. I’ve got all the directions on how to create that in the recipe! (Just follow the link below for the printable version)
