Candied Sugar Cashews
I love the Candied Sugar Cashews and Pecans
from fairs and carnivals. But they are so expensive!!
When we went to Hillsville for the City Fair I bought some for my husband and decided that I could make these little delights at home!

Candied Sugar Cashews

Created by Angie on January 17, 2017

Ingredients

  • 1 cup Cashews (or any other nut that you like)
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg white
  • 1 teaspoon of vanilla

Instructions

  • Preheat oven to 250. Line a baking sheet with parchment paper or a cooking mat. Spray the sheet with cooking spray.
  • Make sure to spray it good!
  • These will stick really bad to the pan if you don\'t use wax paper or spray it!
  • Beat egg white and vanilla in a bowl. Poor cashews into the vanilla egg mixture and stir.
  • Make sure to cover all cashews with the vanilla egg mixture.
  • I used a drink shaker for this next part but you could just use a bowl if you don\'t have a shaker.
  • Combine both sugars into the shaker.
  • Add Cashews. and SHAKE!!!!!!!!
  • Make sure to coat all of the cashews.
  • Pour the cashews onto your baking sheet with the wax paper sprayed with cooking spray.
  • Use a spatula to spread them out into a single layer.
  • These need to cook for 1 hour.
  • BUT you must stir them every 15 minutes so that they will not stick and burn, and will roast just right!!

I made these last night! Made them for my hubby to take to work in his bucket and they didn’t make it with him. They are addicting I used almond extract instead of vanilla ( I was out) and added cinnamon and they were sinful.

Thamk you for sharing your recipes. When I was a kid my neighbor made Cashews with the ingredients in your recipe. . At the time I was too one to even think to ask for the recipe for these. I have never forgotten how good these were. I’ve looked for years to find the recipe as well. I am excited to make these.

I made these today. very good. I doubled the recipe & added just a dash of salt to the sugars.
Mine were beautifully done at 45 minutes. Thanks!
