There are many things to love when it comes to blogging. I love coming up with new recipes, I love it when people write to me or comment and let me know that they loved a recipe that they tried from my blog. I love meeting new people and making wonderful blogging friends.

I also love the fact that blogging opens up so many doors when it comes to trying new products. This blog has helped Thomas and I both branch out and try new foods. We’ve been introduced to new products and thanks to the opportunity to try new items we’ve found things that we liked and loved as well as some things we could go without.  I regularly stock my fridge and pantry with some items now that I wouldn’t have normally picked up before. While I’ll always love the products and foods that I grew up on, I love branching out and trying new things.

Homemade Caesar Dressing 

When I was asked to partner with Gorton’s Seafood to come up with a recipe to go along with their all new Gourmet Fillets, I was certainly interested in checking them out.  My mom use to feed us Gorton’s Seafood when we were growing up but to be honest I hadn’t had it much as an adult.

However since we’re always looking for ways to add fish into our meals each week, this looked like something I could really get behind. Thomas and I had tried to eat more fish in the past because we knew that it was good for us but we always fell short of our goals because I was really picky when it came to how my fish was prepared. But I knew I needed to eat more because the USDA, American Heart Association, American Cancer Society, and American Diabetes Association all recommend eating seafood at least twice a week! Well, I’m proud to say that after trying  Gorton’s Seafood new Gourmet Fillets, we’ve surpassed that goal for the past week.

Blogging has introduced quite a few products into our lives that we love but can I tell you something? I’ve never had Thomas fall head over heels like he did for these Gourmet Fillets.

Before buying the first few packages we didn’t really know what to expect but after cooking up a few of these (because of course I have to make sure it’s tasty if I’m going to share it with y’all) it was clear that we had found a new freezer staple.

We bought few packets of the Parmesan Crusted Cod and Pub-Style Beer Batter Cod over the weekend to fix while I worked on some recipe ideas, Thomas went crazy for the fillets and then he went back to the store Monday and Tuesday to buy more.

Ps. let me just tell you that I know we’re using The Parmesan Crusted Cod in this Caesar salad recipe but the Pub-Style Beer Batter Cod is perfect for a quick “Fish & Chips” at home.

That’s what we had last night for dinner, we cooked up a pack of the Pub-Style Beer Batter Cod and some fluffy steak fries and had our own little quick version of Fish & Chips for dinner! So good!

After working on a few ideas, The Parmesan Crusted Cod became the star for this Cod Caesar Salad with homemade Caesar dressing.

I baked up a few pieces of the Parmesan Crusted Cod, whipped up an easy homemade Caesar salad dressing, tossed it with some romaine hearts and finished it off with a few shavings of Parmesan cheese and fresh cracked black pepper.

The Gourmet Fillets are in the freezer section of your local grocery store but they’re made with real ingredients  have no artificial flavors or MSG, plus they cook to perfection in about 20-25 minutes!

Stick them into the oven and by the time you’ve washed and plated your lettuce, whipped up the salad dressing and corralled everyone for dinner the fillets will be done and ready to be placed on top of your gorgeous homemade Caesar salad.

Cod Caesar Salad with Homemade Caesar Dressing

Bake up a few pieces of the Parmesan Crusted Cod, whip up an easy homemade Caesar salad dressing, toss it with some romaine hearts and finish it off with a few shavings of Parmesan cheese and fresh cracked black pepper.

  • Yield: 4 servings

Ingredients

  • 2 packages of Parmesan Crusted Cod Gourmet Fillets (4 Gourmet Gourmet Fillets total)
  • 6 cups romaine heart & romaine lettuce
  • 2 cups croutons
  • 1/2 cup Parmesan shavings
  • Caesar Dressing (recipe below)

For the Caesar Dressing:

  • 1 garlic clove, minced
  • 6 tablespoons lemon juice
  • 2 teaspoons Worcestershire
  • 2 teaspoons Dijon Mustard
  • 1 cup mayonnaise
  • 3/4 cup vegetable oil
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 teaspoon coarsely ground black pepper

Instructions

  • Preheat oven to
  • Move oven rack to the middle of the oven.
  • Preheat oven to 425F.
  • Arrange uncooked cod fillets on a metal baking sheet.
  • Bake uncovered for 23-25 minutes or until done. - Flip the Fillets at the 18 minute mark.
  • **Fully Cook fish to an internal temperature of 165F or higher before servings**

For Dressing

  • Add all of the Caesar dressing ingredients to a bowl and whisk until combined and smooth.
  • Taste and season as desired.

To assemble:

  • Add the lettuce and croutons to a large bowl.
  • Add about 1/2 cup to 1 cup of dressing and toss to combine. Add more dressing if necessary.
  • Fill each bowl with lettuce.
  • Top with a Parmesan Crusted Cod Fillet.
  • Sprinkle with Parmesan shavings.

    Awesome job on the homemade dressing! It makes such a difference. Plus, cod is such a nice replacement over the typical chicken piece that comes with Caesar salad!

    I love a good caesar salad, as well as a good, crispy filet of fish. I haven’t eaten Gorton’s since I was a kid! I had no idea that they made anything other than fish sticks. I’ll have to look for the Gourmet Filets.

    So, I am totally not one to but frozen fish fillets, but these look awesome! And I LOVE this idea for a Caesar salad! 🙂

      I’m normally not either. I always picture frozen fish sticks when I think about frozen fish fillets. This is literally the first time that I’ve bought frozen fish fillets as an adult haha. I was really interested in seeing if they had changed. I have to admit that they exceeded my expectations .

    I bet this homemade dressing is spectacular! I love homemade dressings over jarred. Freshness just can’t be duplicated in a bottle with preservatives.
