Easy Baked Teriyaki Salmon and Vegetable Sheet Pan Meal – the perfect healthy weeknight meal! This entire dinner is ready in 30 minutes!
I was a super bad blogger this past week. Ok, well I mean I did a lot of of blog work and recipe testing this week but I haven’t posted anything since last FRIDAY! Ahh, I know! I’m sorry.
Not only have I failed to post anything since last Friday I also forgot about my blog’s anniversary and my dog’s birthday until this morning! These were both celebrations that I completely forgot about.
Yes we celebrate our dog’s birthday, heck we don’t have kids yet at least me celebrate my pup’s birthday. hahaha As for the blog’s anniversary, I’m also excited to celebrate that because it has been such a great part of my life over the past years.
So today my Bella turns 9 and BigBearsWife.com turns 8 years old!
We’ll be having vanilla ice cream and apple pie later tonight to celebrate Bella’s birthday and Thomas picked up take out for dinner tonight. Yep, I’m celebrating my 8th recipe blogging anniversary with take out and I’m totally ok with that.
Now does Thomas know it’s my blog’s anniversary? Heck no. Well probably not. He’s awful with dates but I’m just going to pretend that he remembered and that’s why he’s buying dinner tonight. 😉
Even though we’re eating take out tonight (which will include some Teriyaki chicken and veggies!) I still want to share this Easy Baked Teriyaki Salmon and Vegetable Sheet Pan Meal with y’all!
Some people may totally be against the sheet pan meal “fad” but I love it. It’s one dish to bake on and one dish to clean up after dinner. That’s my kind cooking!
Don’t like Salmon? No Problem! Just switch out the salmon for chicken tenders! You might need to cook it just a bit longer for chicken though! Tip: Flatten the chicken before cooking for faster cook time!)
